Hi There...Here are a few tips to consider: adding more pumpkin rather than applesauce. Basically they have the same moist texture and it'll give the loaves more pumpkin flavor. Why not use milk, buttermilk or vanilla almond milk rather than plain ol water? Maybe milk spiked with pumpkin coffee syrup may work wonders too.
Also, add 2ts of pumpkin pie spice instead. i agree with reducing the sugar & using some brown sugar like most have stated. I use a stick of browned butter in place for some of the oil part. Using vanilla extract seems useless since it'll be lost in all the many flavors involved. And lastly, add some pepitas/raw pumpkin seeds on top to give it some visual flair! Happy Baking :)
