When we decided to make these, I was skeptical. I love banana bread, and I said, "Why risk making something LIKE banana bread, when I know I could just make banana bread and KNOW I'll enjoy it?" Well, like with all things in life, you don't get rewarded without risk. And this one really paid off. These muffins are like having tiny, moist, scrumptious, individual-serving banana breads - But what really blew me away was the crumb top. It's what pushed these muffins over the top and made me a lover of this recipe. Now, I'll have to think: Do I want to make banana bread, when I could have these muffins, instead?! Great job on this one!

Fresh Tomato Pie

WOW! Just...WOW! I cannot believe how great this recipe is. A big plus: It re-heats really well with a quick ZAP in the microwave. So Good! You, there! The one looking for a quick, healthy, great-tasting meal to make tonight: What are you waiting for?! Make this!

Easy Shake and Bake Chicken

We didn't use the butter (instead, just coated the glass pan with PAM) and it tasted just lovely! AND, it works on pork cutlets, too! Yum!

Simple Garlic and Basil Pesto

Before I tried this recipe, I was a "red" sauce type of guy. This Pesto is simply amazing! Added bonus: Everything fit inside my Mini-Prep processor - so no need to dirty the large one.

Quick Cassoulet

Amazing. Simply wonderful. You must try this recipe! I admit I tinkered a bit with it. If I may (with all due respect to a brilliant recipe): 1) I don't drain the tomatoes. 2) I replace ALL the herbs and spices (including salt) with Herb D'Provence. 3) I use andouille sausage. I also have a serving suggestion: spoon it over a piece of Italian bread, and top with grated Parmesan (the Parmesan helps cool the spice of the andouille.) So. Good.
