Zucchini Patties

Very easy to make and had a splendid flavor. I didn't drain the zucchini beforehand, I only read that after it was all mixed. Added a dash of garlic powder and fresh flat leaf parsley that I had growing. Will make again!!

Parmesan Crusted Tilapia Fillets

Ridiculously easy and packs so much flavor! Do NOT use the cheap Parmesan (I'm looking at you Kraft). Spring for the quality cheese and enjoy!

Easy Meatloaf

A good starting block to be creative. I added 1 cup shredded carrots and the kids ADORED it! This lends itself beautifully to any changes. I've also subbed ground bread sticks (leftovers) for the breadcrumbs. I have made this numerous times with great success. I puree the onions as I have a kid that HATES onions. No sacrifice on texture or flavor by doing this.

Soft Oatmeal Cookies

Don't use 3 cups of oats! I used 2 and chilled overnight. I added 1.5 cups raisins. These turn out soft and stay moist for days!

Easy Mint Chocolate Chip Ice Cream

Very easy and fun project for my daughter and I to do together. We used chopped chocolate instead of the chips and took other's advice on using mint extract instead of peppermint. Just like the store kind but now I know what is in it!

Spinach Cheese Manicotti

DELICIOUS!!!! The only change I made was to add minced garlic to the cheese/spinach mix. This was a big hit and reheated very well for leftovers.

Jen's Fresh and Spicy Salsa

Great salsa recipe. I use 3 more tomato, fresh garlic ( no powder), and 1/2 the recommended cilantro, but that's a personal preference. Depending on the jalapeno size, I use 1 or 2 to kick the heat up. I also add red pepper flake in a pinch. The texture is great and can be drained a bit if it's too watery for your liking. Easy to toss it all in my processor and pulse it till it's perfect. LOVE LOVE LOVE that there is no strong onion taste with this!

Jay's Signature Pizza Crust

This never lets me down! I have added herbs on some occasions. This also holds up well bagged in the fridge if you make it a day ahead of time. Always get compliments on the texture, taste, and ability to hold a mountain of toppings. Works awesome with my pizza stone.

Pie Crust I

Had to double the recipe to get the amount needed for my pie. I also had to add more water to keep it from crumbling. It tasted delicious but the directions and measurements as written seem off to me.

Apple Pie by Grandma Ople

This got rave reviews. Both pies I made were gone almost immediately. I do recommend pre-baking the bottom crust before filling it to get a firmer and less soggy bottom crust. I also glazed the crust with a egg white/water mix while baking to get a nice color and shine. This is a new go-to for apple pie!

Black Bean, Corn and Turkey Chili

Watery. Had to add a can of tomato paste to thicken it up. Added home made salsa instead of store bought. Definitely a good start but needed more spice. I subbed chicken for the turkey and upped the cumin and chili powder. As I said it's a good starting point but not a great recipe as a whole.
