Homesteader Cornbread

I've made this twice now and LOVE it. Cornbread is a big part of my Southern cooking history, and I love this simple from scratch recipe. This isn't sweet and not bitter, not salty...just perfect for anything you want to pair it with. I'm making cornbread stuffing today, and I just took a bite of the cornbread ahead of making the stuffing...it was perfect!

Best Chocolate Chip Cookies

The BEST chocolate cookie ever! This is my second great choco cookie recipe I have found on AR, and both were great, but this is the best. I had to use baking margarine because I was out of butter. It worked beautifully. We rolled these fairly large, about 1 1/2 times the size of a golfball. We didn't have chocolate chips, so we broke up semi-sweet baking chocolate bars, so these were Chocolate Chunk. Fantastic, our new CC recipe!

Old Fashioned Onion Rings

These are the best onion rings I've EVER eaten. Make only with sweet white or yellow onions! We tried both red and white and red doesn't work. My husband made these and if I make them again I'm going to "double dip" them in the batter before frying because the batter is so good.

Downeast Maine Pumpkin Bread

This recipe DESERVES a 5 Star rating, they are THAT good! **For those of you who gave this anything less , you probably used cheap quality pumpkin puree, because there is nothing wrong with the flavor of the recipe - it's perfectly balanced. I made this into jumbo muffins. I did the recipe exactly as suggested plus added 3/4 cup raisins. This is the best pumpkin bread/muffin recipe I have ever made, and I make them often. I used homemade pumpkin puree from a Hokaido pumpkin. I cut the pumpkin in half, removed pulp and seeds, and put the pumpkin halves in a water bath for around half an hour, until it was soft (remember to remove stump and any ugly bumps but cook with rind on). I pureed the pumpkin after it cooled and used it for my pumpkin puree. The color is gorgeous and the puree really does taste totally fresh, like right out of your garden. This recipe would use 2 1/2 cups fresh puree.

Fresh Southern Peach Cobbler

I've been making this for 5 years. I make it at least twice a month during the summer, and once a month the rest of the year. My family loves it. I make it with all kinds of fruit, but especially like it with blueberries, however the peach is better than anything else. Thank you for this wonderful recipe!

Best Brownies

My family rates this awesome brownie recipe with 5 stars! Love that you can make such super chocolatey brownies from scratch. I used Dutch cocoa powder and put pecans on top. The best I ever baked!

Strawberry Rhubarb Coffee Cake

This was the very, very best coffee cake I have ever made or eaten. I was totally surprised. The crumb of the cake was fabulous and tasted like a coffee cake should, buttery and moist and not too dense, not too fluffy - just perfect. I will make this next time in a slightly larger pan because the streusel topping was generous, and I felt it was too much cake and topping to fit for a perfect appearance - it went over the edges a bit. Anyway, it tasted perfect - the only adjustment I made was to moisten the batter a bit with more buttermilk, because the batter was so thick and I used fresh rhubarb and strawberries. Sending this to my friends, it's that GOOD!

To Die For Blueberry Muffins

This is my favorite muffin recipe of all time. This turns out perfectly every time (I have used this for about 4 years now and should have rated it earlier). Best using medium muffin cup pan, but I have also had perfect results using a jumbo muffin cup pan. This is a family favorite that is going down in our family cookbook for future generations...thank you so much for sharing.

Hungarian Mushroom Soup

Curried Walnut Rice Salad

This is 4 1/2 stars, only because I substituted. I loved the dressing and my family couldn't get enough of it! I didn't use the curry because my daughter is allergic to it, but it still had plenty of fresh flavor. I substitued the cucumber for sweet peas (frozen, cooked then cooled) and added two small apples. I coated the apples in the dressing before adding them to the mix, so they wouldn't turn brown - and the next day they were still really white and crisp. Great recipe! I'm making this again today for my in-laws ;>)

Buttermilk Pancakes I

We raved about these pancakes - the best recipe so far that I have tried. I live in Germany, so it's not easy to find similar ingredients here, but this was so simple and turned out great! I took photos, so I will submit them for you. This will be my pancake recipe from now on...fluffy and tasty...yum to the MAX!

Peking Duck

My husband said this was the best duck he ever had, and he has had Peking Duck in Peking! The roasted crust was great and the meat very succoulant. I prefer a saltier taste, so I will add salt next time. The steaming then roasting process was key to the tenderness of the meat, as duck is often cooked too dry. Great recipe!

Poppy Seed Bread with Glaze

I wish I had taken a photo of this bread. I will next time - it was so perfect in the pan and really turned out beautifully. My family went nuts over it. I prepared it exactly as directed, and it turned out sweet and moist. I have made poppy seed bread for years and never had such a great recipe! I also sprinkled slivered almonds over the top of the glaze right after pouring the glaze on, which was the perfect holiday touch. Thanks so much for this...it will be a repeat for sure!

Lemon Square Bars

Chicken Enchiladas II

Fabulous. My husband went crazy over this meal. My only suggestion is to double the ingredients for a family. I served this with salsa over the top, which really made the meal, and served with a crisp iceberg salad and ranch dressing. Living in Germany, we get cravings for Mexican, and I was able to find all of these simple and wonderful ingredients. Even my picky 11 year old daughter loved it!
