Suki's Spinach and Feta Pasta

Sounded amazing with the feta, but the mix of the melted feta with the red pepper flakes was awful. Next time I would leave the feta in chunks, and mix in right before serving and omit the red pepper flakes.

Quick Oatmeal Pancakes

Good pancakes, but too much baking powder. I doubled the cinnamon and vanilla extract and added 1/2 cup of semi-sweet chocolate chips. Kids ate them up faster than I could cook more, and they didn't need syrup because the chocolate chips gave them that extra sweetness. Recipe made 13 mid-size pancakes, which I was surprised since it didn't look like a lot of batter. Don't over mix, otherwise they will come out flat.

Grilled Fish Tacos with Chipotle-Lime Dressing

I had to change a few things, as I didn't have the time, seafood seasoning or adobo sauce. So maybe my review isn't quite fair, since I didn't do it as exactly written. I had an hour to get dinner on the table, so skipped the whole marinading part. I made the marinade right in my grilled pan, let the fish soak in that for about 15 minutes while I made the dressing. I found the marinade too sweet. Next time I will put a lot less honey in it. The dressing was good, but definitely needed the adobo sauce to give it more of a kick. It made WAY too much dressing, though. Not sure what I'll do with all the extra. I suggest making half of what it calls for and you'll still have a lot let. Turned out to be a yummy dinner, though. I added broccoli slaw, avocado and red peppers to the topping. The kids loved it!!

Pumpkin Apple Streusel Muffins

Delicious muffins, perfect for the fall! I changed the sugar to 1 and a half cups instead, and they are still very sweet. Next time I'll try just a little more than 1 cup. I added a small handful of raisins, as well as pumpkin seeds (about 1/4 cup of each). I filled one regular and one mini muffin tin, which used up all the of batter perfectly! Now there are some little ones for the kids' lunches and bigger ones for breakfast at home! I also skipped the streusel part, no need for it as there was so much flavor in the muffin! Very good recipe, will definitely use again!
