Jalapeno Popper Spread

I took this to a ladies afternoon at the local VFW and it was a hit, described as "to die for". I made 1-1/2 times the recipe with about 6 oz. chopped jalapenos, then baked it topped with panko crumbs sprayed with cooking spray. DH even said it was really good, and he's told me for 35 years that he does not like Parmesan cheese. Great recipe.

Texas Coleslaw

I doubled this for a potluck and thought it was tasteless. Asked DH to taste it, he thought it was great. Evidently so did others, because I came home with an empty bowl. So what do I know? I did add more cayenne in an attempt for flavor.

Sassy Chicken Enchilada Dip

Pretty good! I didn't use cilantro (don't like it), used toasted minced onion instead of green onions (didn't have any), garlic powder instead of minced garlic and added a tiny bit of cayenne for a little more "oomph". I also used leftover turkey. Definitely will make again.

Oven Baked BBQ Ribs

I don't usually change a recipe the first time I make it, but it was either that or yet another trip to the store. I didn't have enough Worcestershire so I used some soy sauce. After deciding to make a double batch of the sauce, I realized I didn't have enough ketchup either, so I doubled everything but the ketchup and substituted Dave's Devil's Spit, a very spicy BBQ sauce. Wow! The homemade sauce and the store-bought sauce were wonderful together! I had 14 lbs. of ribs so it seemed to take forever to brown all of them, but it was sure worth it. Fixed this way, they were fall apart done.

Pork Tenderloin with Tomato and Pepper Sauce

I tripled this to take to a potluck and came home with an empty roaster and requests for the recipe. I did make changes, though. I used pork stew meat, which I browned and put in a roaster. I then sauteed the vegetables in the same pan and added them to the meat. I finished off the dish in the oven. Oh, and I did not use that much black pepper! Good recipe!

Honey Of An Oatmeal Bread

Caramel Apple Bars II

Lucious! Took them to a VFW potluck, was told by the young bartender that these were the best cookies/bars I've made yet! I made them without nuts to please DH, but they were still great.

Sarge's EZ Pulled Pork BBQ

Excellent! I fixed 10 lbs. for a potluck and came home with an empty dish. I did add onions, garlic and a little liquid smoke. I didn't shred the meat, but "chunked" it for sandwiches. Will definitely make this again!

Very tasty! I made a HUGE pan of these for a potluck and came home with an empty dish. The only change I made was that I used 2 boxes of Zatarain's dirty rice with cheese instead of plain rice. Will definitely make again but with less tomatoes.

Ribboned Fudge Cake

Very good cake. I made it for a going-away party at work. BUT did anyone else have trouble with the filling sticking to the bottom of the pan? I greased it very well with solid Crisco, but almost the whole layer of filling stuck. I added it back on to the cake as best I could, but I'm glad frosting can cover a multitude of sins. May try again because it is a simple recipe and impressive for a special occasion.

Cherry Tomato Salad

This is SO good! I used grape tomatoes (grocery didn't have cherry tomatoes), regular diced white onion, sunflower seeds (couldn't find pine nuts) and balsamic vinegar. I didn't use any salt (DH can't have it). I am not a salad person (wish I was), but I could make a meal of this.

Kalua Pig in a Slow Cooker

Loved the texture and tenderness of the meat, but MUCH too salty for our tastes, even using the Hawaiian sea salt. Will definitely make again, but will cut down drastically on the salt and perhaps add some garlic for more flavor.

Egg Noodles

This is now THE noodle recipe I use, after trying many, many others. The dough is easy to work with and turns out tasty noodles every time. I use the dough right away and it works out fine.

Cornish Game Hens with Rice Stuffing

I left out the salt and only used a very scant tsp. of granular bouillon because of low-salt restrictions. I added mushrooms and garlic to use them up and added a pinch of poultry seasoning for flavor because of no salt. I also used brown rice because that's what I had. My husband raved about this (very unusual!). Thank you, I will make this again.

Butterhorn Rolls

I made these for Thanksgiving and now make them all the time, they are so easy and good. Made them for hubby to eat with dips at Christmas as he cannot have salty chips. He said he didn't miss the chips at all!
