Chicken Florentine with Rigatoni

This dish is really lacking in flavor. If you're in the mood for something light and extremely subtle, then you might enjoy this. I was suprised that even with a whole cup of fresh basil it tasted so bland. Don't think I'll be trying this one again.

This was so good...like chicken parmesan with a really big kick. I even added a little extra red pepper since we like things really spicy. I'll definitely be making this again, and soon.

Good when you're feeling nostalgic...though I don't remember them being so crispy at Six Flags. Since making these I tried "Funnel Cakes I" from this site, and they were much more authentic.

Breaded Chicken Fingers

Really good...I soaked the chicken in the buttermilk and egg mixture overnight. They were moist and tender with a nice crispy crust. Perfect dipped in Honey Mustard II from this site.

Spinach Chicken Parmesan

This is great if you follow all the other reviewers’ suggestions...double the sauce and add fresh garlic and plenty of spices, and mix in some bread crumbs with the parmesan cheese mixture. I skipped the green onion and used yellow onion instead. It isn't pretty, but it sure is tasty.

Amish Slaw

Not bad...a nice sweet and sour thing going on. I never cared for mayo based slaw and this is a perfect alternative. Apparently the Amish have more going for them than just those cool hats.

To Die For Blueberry Muffins

Delicious! The topping makes for a nice sweet crunch while the insides are soft and moist. I added just a teaspoon of vanilla to the batter. Made a great afternoon snack with a cup of tea.

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

This was awesome! I didn't have buttermilk, so I just mixed the vinegar into the milk first and let it sit for about 15 minutes to thicken. I won't be buying dressing in the jar anymore.

The Best Meatballs

The perfect meatballs...we really loved these. I made spaghetti for myself and my husband had a meatball sub. Only change I made was to add a bit of oregano along with the parsley.

Potato Soup IX

Great comfort food and perfect for the cold, wet weather we've been having. I cooked a few strips of bacon to add to the soup and used the drippings to sauté the onion in. Overall, and easy and delicious dinner.

Pesto Chicken Florentine

There were no leftovers from this dinner, it was so good. The only changes I made were to add half of a diced onion to the chicken and garlic mixture. Adding fresh pesto makes the pre-packaged Alfredo sauce seem much more "homemade."

Favorite Barbecue Chicken

Since it's freezing outside, I decided not to grill, but baked the chicken instead. I just put the chicken pieces in a baking dish and covered them with sauce. I also added one tablespoon of prepared mustard to the sauce as well. I won't be going back to the bottled stuff again, this sauce was delicious.

Awesome Korean Steak

I had been looking for a good Bulgogi recipe for a long time and this is it. I had the butcher slice the meat really thin to save me a lot of time and I marinated it for 24+ hours. I served it with rice and stir fried broccoli...so, so delicious.

Tuna Noodle Casserole from Scratch

Wonderful comfort food. This will be in the regular rotation at our house...so, so good. I didn't have any breadcrumbs so I substituted crushed Ritz crackers, made a nice crunchy topping.
