Ultimate Twice Baked Potatoes

Oh so yummy...perfect comfort food and a nice change from plain old mashed potatoes. They would have been even better with the bacon, but I had to leave it out for my husband who has an unnatural aversion to bacon.

Asian Lettuce Wraps

Very much like P.F. Changs if you substitute minced chicken for the beef. I also used fresh ginger instead of pickled. My husband has since requested these a ridiculous number of times.

Cajun Chicken Pasta

So good, and so easy too eat way too much. My husband and I were unable to move for some time after dinner, which is both a very good, and a very bad thing. So, so yummy.

Good Old Fashioned Pancakes

Holy these are good! After trying this recipe, I don't think I could ever make pancakes from a box again, it would just feel too wrong. The phrase "just add water" no longer has a place in my kitchen.

Garlic-Lemon Double Stuffed Chicken

Easy and delicious. I tried this since my husband is a cheese junkie and it didn't disappoint. The chicken was nice and moist and we really enjoyed the lemon "zing." I'll definitely make it again.

I'm sitting here trying desperately not to go back to the kitchen where the warm cinnamon rolls still all alone. So freakin good...you might want to cut the recipe in half if you have issues with self-control.

Thai Peanut Chicken

We really enjoyed this one. It's a little on the salty side so I'll use a low sodium soy-sauce next time. We loved the flavor of the peanut butter and the added crunch of the nuts. I followed other reviewers' suggestions and doubled the sauce. I also threw in some red bell pepper. So delicious!

Chicken Florentine Rice Casserole

It sounded promising, but totally lacked flavor. Even with all the herbs, this was so bland and boring. The cooking time seems a bit long, unless you like dried-out rice and overcooked spinach. Leftovers are in the trash, and I hate wasting food.

Chicken Salad in the Tropics

A great idea, just missing something. The dressing is very thin and just runs right to the bottom of the bowl, it doesn't seem to coat the greens at all. The combination of fruits and green pepper was wonderful though. I might try it again but with some changes to the dressing to thicken it up a bit.

Yellow Cake

I used this recipe to make a pineapple upside-down cake, so I replaced the orange juice with pineapple juice. It turned out fairly bland even with the added pineapple and brown sugar topping. I think I'll keep looking for a good yellow cake recipe.

Soul Smothered Chicken

I only had boneless breasts on hand but I thought I'd give it a try. We were not disappointed. I served it with mashed potatoes, green beans and biscuits...definitely good comfort food.

Sloppy Joes II

We really liked these but with a few changes. I decreased the ketchup and added a can of tomato paste, added 1 tsp of Worcestershire sauce and a dash of red pepper. The sloppiness was just right and they tasted great, much better than the canned stuff.

Easy Biscuit Mixture

I also live outside the States where real biscuits just don't exist. I used the recipe to make a small batch of biscuits and also to make a batch of Chicken and Dumplings. The biscuits turned out great, slightly crisp on the outside and light and fluffy on the inside. The dumplings just didn't work...they completely dissolved in the soup and we ended up with stew. For the biscuits, I used about 3/4 c. of milk to 2 1/2 c. of mix.

Chicken with Garlic, Basil, and Parsley

Nothing spectacular, just a nice and easy chicken dish. Of course, it would be better with fresh herbs, but this works well for a quick and easy main dish. I brined the chicken breasts for about an hour beforehand, and it really helped to keep the chicken from drying out.
