I followed this recipe to a "T" and didnt have any problems with cookies flattening out. What I did was (using a electric mixer) mix sugars and butter and then mix in the eggs and vanilla. Still using the electric mixer, I added the flour mixture slowly into the wet. Then mixed by hand the chips, oatmeal and walnuts. I did not use a spoon to put cookies onto sheet. I used my hands to form balls about 1 1/2". A little sticky granted, but once you have the right amount, wash your hands and the water will make it easier to form the balls correctly. The cookies were left on the cookie sheet lined with parchment paper for about 10 mins. Also, because these were ball shaped, the cookies dont have dark or crispy edges, they simply have a beautiful golden colour all over, and bake throughout evenly.
