Summer Vegetable Ratatouille

If you need a kick of veggies, you can make this a healthy meal in itself!! I used what I had in the house and for veggies only used 1 zucchini, 2 eggplants (I cubed the eggplant then lightly coated with salt and drained in a collander for an hour before cooking), 1 red pepper and substituted 2 cans of drained tomatoes for the fresh. Also added 1 1/2 cups mushrooms too. I also reduced the oil significantly, adding only a splash of oil (and a spray of nonstick cooking spray) each time sauteeing. Didn't have bay leaf or thyme so I used fresh basil and dried oregano and parsley instead. Still turned out divine! Also, be sure to remove the large pot with sauteed onions and garlic from heat until you finish adding all the other veggies (I have a gas range and the onions ended up burning, even on low heat!) Serve with parmesan cheese on top to make it extra nice!

Pumpkin Curry with Lentils and Apples

Fantastic, I think if I made it exactly per instructions it would be *****+! I had lots of fresh pumpkin and was able to make this from mostly what I had in my cabinets and fridge--didn't have some of the ingredients but substituted courgette for the carrot, cinnamon for the cloves, and I didn't have curry powder (I upped the cumin). I cut down on the time needed by baking the pumpkin, pre-cooking the potatoes, using tinned lentils, using canned tomatoes instead of fresh, and frozen, thawed and drained spinach. Next time I'll be sure to have all of the correct ingredients. This is great with brown rice. Thanks for such a great recipe!

Apple Bran Cheddar Muffins

Wonderfully different and delicious with a few changes (they def need more liquid!), similar to what the first reviewer wrote. I used 1 cup milk, shredded the apple, used 2/3 cup melted real butter instead of the veg oil, used 1 cup whole wheat and 1/2 cup white flour (instead of all white), 1 cup cheddar and added about 2/3 cup of chopped walnuts. With all of these changes, it made too much for one batch, so I split it in 2 batches. My boyfriend and I LOVE them and these will definitely be made again! Mmmmm!

Deep Chocolate Raspberry Cake

DELICIOUS, rich, dense chocolate experience! Didn't have any chocolate squares so substituted 2 cups(!) cocoa and 1/2 c butter, substituted 1 c plain yogurt for 1 c butter, and used gluten free flour (as I'm celiac). This is HEAVEN. Made own strawberry puree thickened w/ cornstarch and creamcheese frosting. AMAZING, thank you Roz!!!! Tastes like heaven!!

Roasted Garlic Cauliflower

hubby said 'I don't usually like cauliflower but this is great!' nuff said!! (he also likes the 'smashed cauliflower' recipe on allrecipes which tastes like mashed potatoes--also worth a try!) and I only had garlic oil (instead of real garlic) and forgot to use the parsley! it's worth it to use real grated parmesan (gets all crunchy!) and I recommend dipping it in some pesto! thanks for a fantastic idea!!!

Zesty Taco Casserole

yummy basic recipe to use leftover rice and cans in your cupboard...I only had chilli oil and 2 cans of flavoured (hot) chilli beans and 1 can of tomato puree, so used these instead of garlic/salsa/chillies/veg chilli. Also used 3 green peppers, 1 red pepper and increased corn to make it more veggie-laden. Added an egg to bind it. And to make it healthier I crushed up Corn Thins instead of corn chips (if you've never had them search for them! they're popular here in New Zealand/Australia and are like rice cakes but thinner, tastier, more fiber, baked and made from corn, yum! you can find where they're sold in the USA/elsewhere http://www.cornthins.com/) served as a casserole w/ chopped tomatoes on side. will make this recipe again, very tasty!

Vegan-Friendly Falafel

fantastic! since I am gluten free, this recipe's great...I didn't even use potato or refrigerate it and it was a hit with my friends! I added fresh parsley along w/ the cilantro and baked as per previous reviewer's recommendations. served with 'Real Hummus' recipe found on here, rice (or pitas for the gluten-tolerant), salad and oven-roasted peppers, onions and eggplant. delicious!

Pecan Oven-Fried Fryer

Delicious and highly rated by hubby!! Have cooked this 3 times now and it's always a winner! I'm celiac so I subbed gluten free flour (plus other ingredients-googled 'biscuit mix') for the biscuit mix, didn't have evaporated milk so just mixed up a thick mixture of powdered milk, and reduced the butter to 1/4 c (even though it'd really taste more 'fried' with more butter but trying to cut down!) I pour the leftover coating and milk in the bottom of the dish to add more crispy bits and moisture, YUM! Would serve to guests!!

Pasta Lasagna

fantastic recipe, easy to make! I used gluten free pasta and only had italian-flavoured cans of chopped tomatoes, and it still turned out amazing! I covered all of the pasta with sauce/cheese so didn't have to worry about covering.

Real Hummus

I have a lemon tree and have made this recipe a few times already when I'm in the mood for fresh hummus! An excellent base to experiment with. I add the cumin and salt to taste. Sometimes I blend in sundried tomatoes or roasted red peppers. Thanks for a fantastic, simple recipe!!!

Homesteader Cornbread

I've made this recipe 20+ times and have passed it onto many others overseas. ALWAYS a hit!!! I'm celiac, so I substitute gluten free flour with no problem. If making for myself (and not a party) I often substitute plain yogurt for 1/2 the butter to make a bit more 'healthy'. Freezes and reheats well, always gets rave reviews!

Simple Mexican Rice

Great basic recipe, I was looking for a baking recipe instead of stovetop and used this as a basic recipe for a main meal...I added bit of paprika and oregano, less chilli and then canned tomatoes, a can of kidney beans, a can of black beans, and topped with cheese once it was cooked and cooked under the grill (broiler) til brown and bubbly. Delicious! Served w/ freshly cut tomato, as that was all I had, thanks for a great staple recipe!

Corn Dip II

Have used this recipe numerous times and nearly everyone asks for the recipe! I substitute plain lowfat yogurt for the sour cream, and use lowfat mayo too--you can't tell the difference b/c the cheese is rich enough. I use frozen corn (heated and cooled) and usually add 50% more than called for (to taste) since the sauce is so rich. I also quadruple the lime juice (substituting lemon if I don't have it) and add fresh chopped red pepper for color. And I just keep adding more cumin to taste...usually double or triple the amount called for. I just like to make it a bit lighter--great recipe to tweak to your own tastes!

Smashed Cauliflower

a good basic recipe to work from...I didn't follow the recipe as didn't have the right ingredients but the gist of it is good! Try it once and then suit to your likes: I steamed the cauliflower til very soft and added: 2-3 T concentrated chicken broth 3 T powdered milk mixed with just enough water to make it a paste garlic 2 slices American cheese (it was all i had in back of fridge!) Tried to mash it but was too watery/hard so blended it in my mini-food processor but was still too blobby, so used my hand wand (not easy w/o too much liquid) and the texture taste was close to mashed potatoes!!! really!! (but keep your expectations realistic!) thanks for the idea, is worth some more tweaking!

Rich Yogurt Waffles

Great recipe, except I substituted 1/2 cup melted butter for the shortening, and added an extra 1/2 cup chia seed gel for fiber. Also for variations, you can add toasted sunflower seeds, chopped cooked ham, sambal oelek (flavored mild chilli paste) and grated cheese. I also made other waffles with spinach, chopped cook ham, feta cheese and cracked pepper.

Gourmet Mushroom Risotto

Delicious! And easier than I thought, I was a first-time risotto maker and it worked fine, took about 30 mins for it to cook up, not crunchy but just perfect! Almost tripled the recipe so I could freeze leftovers (am having a baby anyday now!) and it was still so easy to make, would recommend making it for a large crowd. I used only white mushrooms, used onions instead of shallots/chives, and also added cooked asparagus and chicken at the end w/ the mushrooms. Thanks for a fab recipe!

Apple Banana Cupcakes

Fantastic way to use up extra fruit--delicious and moist!! I used 2 apples, 1 banana and even 1 peach, and it was fantastic! Substituted plain yogurt for all but 2 T of butter and reduced sugar to 1 cup (could use even less!) I'm also gluten free, so used gluten free flour. Turned out fantastic! Thanks for broadening my baking horizons beyond banana bread and apple crisp!

Creamy Macaroni and Cheese

This is fantastic, the first creamy mac n cheese recipe I've made and it is, in fact, 'so easy!' I used gluten-free flour and only 1 can evaporated milk. And I realized I didn't have a whisk (new house) but it was ok! I just added a very small amt of hot milk/broth to the butter/flour, stirred till doughy, added another small amt milk/broth, stirred again, etc until it was all gradually stirred in. Also topped with finely chopped sauteed ham and onion, added a bit of extra cheese, and put it under the grill/broiler. THANKS for a great recipe!

Texas Chocolate Frosting

Simple, quick, easy, delicious! I made this in less than 10 mins to frost some brownies last-minute. But I only put in 2 cups of sugar, stopped there as it was still quite sweet that way (I live in New Zealand now and they don't like frostings as sweet here) Thank you!
