Breaded Chicken Fingers

Fantastic recipe. I tweeked mine slightly and used milk with 1tbsp lemon juice instead of buttermilk and 1/2 cup regular breadcrumbs mixed with 1/2 cup Panko crumbs which gives it more crunch. Recipe works out good as is but i didn't have the buttermilk or seasoned breadcrumbs. Also added 1 tsp onion powder, 1tsp pepper, pinch of cayenne and celery salt and used seasoning salt in place of regular salt. My first batch did not cook through properly so I reduced the deep fry temp to 350 for 3-4 minutes;had tried at 315 degrees for 5-6 minutes and meat was too dry. Definately double dip for a thicker coating!

Grilled Salmon I

Thanks for a great recipe. I modified mine slightly to 2 tbsp soy sauce, 1/2 cup of brown sugar, 2 tbsp olive oil, 1 tbsp butter and 3 minced cloves of garlic with salt and pepper to taste. The water is essential so the marinade doesnt dry out. I served it with lemon slices and rice.

Soft Christmas Cookies

Fabulous with some minor changes. Cut the flour back to 3 cups, salt to 1/4 tsp, marg to butter and bake at 300 degrees for 8 minutes. I roll my dough out into 2 plate size discs between parchment paper and then refridgerate for 1 hour. This makes it so easy to roll out and cut into shapes. Let it rest on the baking sheet for a couple of minutes before putting it on the wire rack. If making large quantities refridgerate cut outs and keep the pan cold between batches, this helps retain its shape. Thanks for a great dough recipe.

Fantastic and tastes almost as good as a restaurant...a rotisserie would make it perfect as it tastes best slowly cooked without drying out. I recommend undercooking it since it will be fried up anyways. Always wet the pita and blast it for a few seconds in the microwave to make more pliable. I usually add mozza cheese at this point. Thanks for the great recipe.

Waffles II

Our family felt the waffles tasted too much like pancake mix and was too heavy. Sorry but will have to go back to my original recipe which is light and fluffy....changes are 1/2 tsp salt, 2 cups milk, 1/2 cup oil, 3 separated eggs, 1 tbsp sugar, vanilla optional
