Irresistible Double Chocolate Muffins

These were awesome. My family couldn't get enough of them! I followed the recipe exactly with no substitutions. With the batter, I was able to fill 1 - 12 cup muffin tin AND a 24 cup mini muffin tin... which came in really hadny with my little ones. The muffins turned out really moist. Thanks for the recipe!

Spinach Brownies

Totally awesome & I can get it made as a side in under 30 minutes... which is a HUGE deal for my family. Like other pp's mentioned, I used frozen spinach and defrosted in the microwave. To alleviate the raw crunch of the onion, I added it to the bowl of spinach & it cooked down a bit while I had it on defrost. It wasn't like sauteing, but it had the same effect, thus one less step. I used 1/2 cup of butter, added garlic powder and Italian seasoning. Came out perfect. I have made this several times and I have also used feta cheese. Lovely recipe. thank you!

Oriental Vinaigrette

This is SO good. Is is fantastic with asian noodles as well. Sometimes if I want it thicker, I add a small bit of cornstarch w/ chicken stock. Zap it in the microwave & it is so nice over meals other than salads. Adding a bit of chili pepper paste adds heat when I want it. I love this with a salad, just as directed.

Spicy Tortilla Roll-Ups

I love this recipe since it is SO versatile. Switch out the black olives for green, add some ham & BAM! You've got Cuban roll ups. These are fantastic just the way they are though. The only thing that I find is that I need 2 packages of cream cheese. If only one is used, then there isn't enough to spread, then we have ended up with too much tortilla than filling. Thanks for posting!

Cucumber Hummus

I found this really good! I LOVE hummus & eat it all the time. I always use cucumbers to sip into the hummus, but never thoughts about adding them to the dip itself! The only thing I did differently was add about 1/4tsp of Beaumonde seasoning (along with the other listed spices). it is just a personal preference of mine. Very good recipe! Thank you!

Roquefort Pear Salad

This was AWESOME!! Made this last night for Thanksgiving & it was a hit. The only thing I did differently was add a bit of water (about 1.5 tablespoons) to the pecan mixture so that the sugar would set up. It wouldn't melt under the heat on my stovetop. It was delicious & I had to keep shooing people away from the pecans!

So good. I did 2 different things... I subbed 2 eggs with flaxseed & used subbed in 1 full cup of whole wheat flour (I used the rest white flour). I only got to have 1 slice. My neighbor, DH, & DS at it all!

Roast Sticky Chicken-Rotisserie Style

I didn't make this with a whole chicken, but rather with about 5 lbs of chicken quarters. The only things I left out was the quartered onion & the cayenne. I placed them on a jelly roll pan for about 1.5 hours on 325. Came out tasting just like a rotisserie chicken!

So good.... I have been making this for 3 years now & can't believe that I forgot to rate this. Any potluck I go to I usually take this & it is always eaten right up! the dressing is very good. Plus, this is a versatile dish where I can sub what I have on hand. thank you!

Came out perfect & just how I like them... I upped the heat to 325 & cooked for a bit over an hour. The potato came out soft on the outside & really crispy on the outside. Used salt, pepper, & evoo. Thanks!

Caramel Brownies III

I have no idea how this didn't turn out great. :-( Thought this would be a good shortcut recipe. Made exactly as directed & the brownies never set. The sides didn't even get kind of hard. The texture was that of a very crumbly cracker. The only sweetness was that of the caramels. I am sorry, but I won't make this again... going to stick with my mom's old & safe 1 hour-to-make recipe.
