Gingerbread Cake with Lemon Glaze

Reviewed: Dec. 21, 2013
I really liked the molasses flavor and spiciness of this cake! I think the lemon glaze is also a nice touch - it makes it feel a little fancier, but you can still put whipped cream on it. I made it twice, exactly as directed, and 35 mins was a perfect cooking time.

Chocolate Chip Candy Cane Meringue Cookies

Reviewed: Dec. 12, 2013
These are great! I made them as directed, but took another reviewer's advice and put some crushed candy cane on top. Very cute, easy and delicious!! The reviewer who said it took 40 minutes to beat the eggs and only made 15 cookies clearly must have done something wrong. It took me about 10 minutes to get to stiff peaks, and I got plenty of cookies. Yum!

Chicken Stir-Fry

Reviewed: Nov. 9, 2013
Do NOT add 2/3rds of a cup of soy sauce to this recipe, it's insanely salty!! I thought it was just for the marinade, but even then I felt strange pouring half a bottle of soy sauce on the chicken. I decided to add the chicken to the pan without the rest of the marinade, and then add the veggies. Even without the 1/2 cup of marinade that was left, it was really salty. I can't imagine if I had added all that sauce. I added 1/2 cup of boiling water instead. All the garlic and ginger was left floating in the unused marinade. I wouldn't make this again, even the way I made it. Way too much work for a bad sauce.

Peanut Butter Noodles

Reviewed: Oct. 30, 2013
This was really good, and easy to make, using ingredients I already had. (bonus!) Even my toddler liked it, minus the hot sauce. The only thing I added that I thought improved it was to put some cilantro and lime juice on it, for that kick of freshness. Great recipe, though!

Pumpkin Chocolate Chip Muffins

Reviewed: Oct. 3, 2013
I just made these and I love them! They're not too sweet, subtle spices and moist. I made them exactly according to the recipe, and mine were done after 20 minutes.

Marinated Baked Pork Chops

Reviewed: Oct. 1, 2013
I really liked this recipe. I doubled the sauce after reading other reviews, and it was perfect for 6 boneless chops in a 9x13 baking dish. I would definitely make it again, and maybe use tomato paste instead of ketchup, as I'm not too fond of the sugar in ketchup. Thanks for the recipe!

Banana Crumb Muffins

Reviewed: Sep. 25, 2013
I made these exactly as directed, and they were great!! I think some of the people giving it negative reviews must have used melted butter instead of just room temperature, because the crumb doesn't melt all over the pan if you make sure to use room temp better and get a dry crumb. Also, very ripe bananas are necessary to get a good banana flavour. Mine rose perfectly, the crumb was lovely and and muffins were moist and flavorful. Thanks for adding something new and different into my muffin repertoire!

Hearty Vegetable Lasagna

Reviewed: Sep. 25, 2013
I made this recipe exactly as directed, as it turned out better than I expected! It was very cheesy, and the mushrooms added enough substance that I didn't miss the meat. I was a little worried about using pasta sauce, but I chose a nice one (portobello mushroom) and it was great! My husband didn't know it was meatless until I told him (after he ate it!) I agree with others that it was way too many noodles, but I had enough of everything that I made an additional 8x8 pan of lasagna with the remaining ingredients and threw it in the freezer. Bonus!

Breaded Parmesan Ranch Chicken

Reviewed: Sep. 16, 2013
I followed this recipe exactly, except I used plain low-fat yogurt to coat the chicken, instead of butter. (It kept the crumbs on really well and they got nice and crunchy.) I would have given it a 4, but it was SOOO salty!! Next time I would definitely use only half of the dressing package. It was good for a quick meal though, with ingredients you probably have on hand in a pinch.
