Pumpkin Chocolate Chip Cookies III

Overall, an excellent recipe. Next time I will cut the cinnamon back to 1.5 or 1.75 teaspoons, and add .25 teaspoons of ground nutmeg. Also, I baked these at 365F for 12 minutes (per another commenter).

Rich and Creamy Tomato Basil Soup

Well, this was delicious, but I found that the 1 cup of heavy whipping cream to be way over the top. Next time I will only add 1/2 cup and/or use less heavy cream. I also only added 1/4 cup of butter. I *do* actually want to taste the tomatoes, you know!

Chipotle Roasted Chicken with Potatoes

Tuna Noodle Casserole from Scratch

FINALLY, a tuna casserole recipe worth making from scratch. Next time I will mix at least half (if not more) of the cheese into the white sauce, and possibly omit the celery. Make sure to slightly undercook the pasta, too.

Vegetable Pasta Salad

I'M DYING over here! This is soooo delicious! I had some veggies and cooked pasta that I didn't want to waste, so I found this recipe and made it (with a few changes because I was working out of my pantry), and I can't stop eating it! I think I could really just sit here and eat the whole bowl, and it makes a TON!

Grain and Nut Whole Wheat Pancakes

We used some of the changes suggested by reviewer Mommy, and it was great. We subbed 1/2 cup applesauce for the 1/4 cup oil, and used 2 eggs instead of one. I might knock back the amount of applesauce just slightly, but it was still great. My husband said this would be great with bananas in it.

Blueberry Coffee Cake

This was okay. Next time I will definitely beat the cream cheese with the batter because it was really weird in chunks--this coming from a person who could normally eat cream cheese straight out of the package (nom nom). The topping was crispy but I wish it had more substance; it was more or less a crispy crust top.

Chicken Noodle Casserole

This was okay. It was a lot of work for an "okay" dish, though. Considering I cook pretty much exclusively from scratch six nights a week, that's saying a lot. The cheese (I think, it could have been the milk but doubtful) did something funny after it came out of the oven; it made my husband comment on the funny texture. I am impressed and happy that it uses no condensed soups, though.

Sugar Cookie Icing

Great recipe. Used 3 teaspoons (that's 1 Tablespoon) of milk instead of 2, and used vanilla instead of almond extract. Edit: After about 12 hours, the cookies started getting light-colored spots on them. By two days, they were all blotchy. I'll try Royal icing next time instead to see if that's any better.

Eileen's Spicy Gingerbread Men

This is the first time I've ever made gingerbread. I doubled the recipe (except that I tripled the baking powder and kept the baking soda the same). They turned out good, although they did spread a little more than I expected. My husband took them to work, and they were well received. People told him that they were the best gingerbread cookies they had ever had, and they said I should just open my own bakery. :)

Easy Peanut Blossoms

While I loathe Hershey chocolate, these are one of my husband's favorite cookies. These were easy to make. My batch actually created >30 1-inch cookies. I won't be afraid to push in the kisses a little more next time as they keep falling out now.

The Best Rolled Sugar Cookies

This recipe is excellent. My air-insulated pan worked best. My regular cookie sheet made these burn a little on the bottom. Oh well. A little imperfection makes them look "homemade" and not like a store-bought cheat! Edit: after a few days, these became kind of tasteless. Like the "freshly-baked" aroma was gone, and there wasn't enough flavor left, like cardboard. :( I may take the advice of another reviewer and add an extra cup of sugar to the batter and try again.

Cinnamon Apple Syrup

This was delicious. I made it according to the recipe and I think I would decrease the cinnamon a bit, maybe to 2 teaspoons. I was a little dubious that it only needed 2T of water, but it worked!
