Quick Black Bean Soup

I used vegetable broth instead of chicken and used less to make it thicker. I also didn't have tomatoes with chilies, so I substituted plain tomatoes. This worked fine because there was enough other types of pepper in the recipes it still had a nice bite. I topped it with fresh tomatoes and avocado.

Sweet and Savory Kale

Wonderful recipe!!! I added quite a bit more kale to this recipe, and did everything else as directed. Loved it, and gave the recipe out to the whole family.

Fresh Asparagus Soup

Vegan Brownies

As is, I would rate this recipe a 3 star. The flavor was just ok, texture was fine. However, when I added a chocolate chip frosting to it they were wonderful. So I would recommend either adding frosting as I did or adding chocolate chips to the recipe.

Vegan Sun-Dried Tomato Pesto

Moroccan Lentil Soup

This recipe was too hot for me. Next time I would leave the cayenne pepper out since the other spices would still give it a good kick. My husband, however, loved it just the way it was.

Rhubarb-Raspberry Crunch

This is one of the best rhubarb recipes I have ever tried. The second time I made this I used 1 1/2 cups of granola in place of the oatmeal. It was even better and there was just the right amount of topping.

Southwestern Grilled Chicken with Lime Butter

What a wonderful recipe for grilled chicken. Its fast, easy and tastes wonderful! I made a few small change since I didn't have a few of the ingredients. I used lemon juice instead of the lime, and a thai pepper instead of the one in the recipe. Next time I will make sure I have everything on hand.

Roasted Apple Curried Chicken with Rice

Very good! My husband loved it, but I found it a little hot for my tastes. Next time I would cut back on the spices quite a bit. It is definately worth trying again.
