Zucchini Patties

WOW! These are so tasty! I made a major change- I used the leftover vegetables from making stock and mashed them up with the other ingredients. Then I had to leave out the mozzarella because I didnt have any, I also added 1 tbsp of flax seeds. I made them a bit larger and made them into veggie burgers! Amazing!

Quinoa and Vegetable Soup

I love this recipe because it makes me feel good with no bloating like high-sodium or creamy soups can cause. I made my own broth just by boiling veggies and some chicken parts. The mistake I made was using red cabbage because I had some to use up and my soup turned purple. It's not the most appetizing color. Also, I left out the tomatoes and kidney beans and added some seasoned chicken pieces at the beginning with the celery and onions. I cooked the chicken through before adding the stock, etc. It's the perfect afternoon snack!

Pantry Curried Quinoa with Garbanzo Beans and Roasted Peppers

This is so much better than I could have imagined. I used water because I didn't have broth, bottled roasted peppers and frozen cilantro. I also added a large sliced portabello mushroom to the onions in the beginning and you couldn't detect it later on. Its a great side dish and meal and I'm seriously considering adding it to the Thanksgiving table (the raisins remind me of stuffing for some reason!). I increased the seasonings slightly and I would add carrots next time. Thank you so much!

Grilled Cod

Amazing flavor! The other reviewers are right about the liquid, I used frozen cod and I tried to take every bit of water out, but while cooking the fish expelled more. I dried it down three times (with an absorbent) but then stupidly added tomatoes which created more water. I just broiled it for a while and all was well. The marinade gives any seafood a wonderful flavor, a bit hot, not spicy, but I served with sauteed radishes and asparagus and cold cucumbers and it was the perfect accompaniment! My new favorite seafood marinade!
