The Kitchen Diva's beans

I've made a variation of this for years, but yours is so much better - the bbq sauce and maple syrup really do a great job giving it a good flavor. Easy, and quick -- It also tastes good as a slow-baked "from scratch" bean recipe. Thanks!

White Bean Chicken Chili

I used the same ingredients, but because I didn't have any of the canned ingredients for a change (shock of all shockers) I used fresh vegetables and dried beans. Delish -- I roasted the tomatillos, with jalapeno, poblano pepper, onion, tomato, and red pepper in a 350 degree oven for about an hour. Did a course chop on them using the blender. I sauted skinless, bonelss chicken breasts with onions and garlic, that I had seasoned with salt, pepper, coriander, cumin, mexican oregano, and dried jalapeno. I added about a can of beer to simmer the chicken. I soaked my beans, added everything together -- extra canned chicken broth, then everthing in the oven - 325 degrees, till beans were soft! I removed the chicken breasts, diced them, and and re-mixed them in with the rest. While it seems like a lot of work, I did it over two days, in cracks of time. Sauce made and beans soaked first, then everything else the second day. YUM. I know, it's not even close to the original, but it is true to the inspiration -- thanks for the recipe.

Cornish Game Hens with Garlic and Rosemary

This recipe looked so good that I had to try it. Being Easter Sunday, and the stores closed, I improvised. Dried rosemary, dried granulated garlic (can't believe I ran out of fresh), brushed the hens with butter instead of olive oil. Made gravy thickened with cornstarch -- no additional chicken broth, I used water, and drank the wine!! Delicious and oh, soooooo easy.

Turkey Taco Salad

Definitely a family favorite. I didn't have fat-free mayonnaise, so I used regular. Definitely should use the non-fat next time, regular makes it taste "heavy". I think it could get by with a little less dressing, as well. I made the mistake of crushing the chips into the entire salad, next time, so my leftovers have soggy chips. I'll plan ahead better next time, and only add enough chips for the present meal I'm serving. Lastly, I didn't have time to let the turkey cool down, so I put it in a strainer and ran water thru it to cool it and remove extra fat. Delicious!

Spinach Stuffed Chicken Breast

DELICIOUS! After I discovered that my husband had eaten all of our spicy Jack cheese, I had to improvise. I used regular Jack, and some roasted Hatch chiles. I had no idea this could be so tasty. Otherwise, recipe made exactly as printed. Thanks.
