Wow! Time flies -- whether it's fun or not! Learning Diabetic Cooking

Well, after getting lazy about my blog, it's direction is changing.Cooking and being primary caregiver for my father-in-law, diagnosed with diabetes is now a high priority.
This is actually a blessing in disguise. How many people short-change their own eating habits, believing that to cheat here and there won't matter? Well, as the person who provides the nutritional balance in the house, my task weighs heavier. Yes, it's
still my father-in-law's responsibility to control what goes in his mouth, and how much he exercises, yet, my shopping and meal choices definitely impact his choices.
As I reflect on the responsibility for HIS well-being, I am making a commitment to follow his meal plan for myself and husband, as well, I have a new appreciation for medically necessary choices.
Although we eliminated most processed foods years ago, and we have always eaten fresh fruits and vegetables aburdantly, I still have a lot to learn, but we will all be the better for it. The journey begins.....
