Black-Eyed Pea Soup

I don't think I've ever had black eye peas before, let alone cook with them... So why did I have a bag of frozen ones in the freezer?!? This dish was delicious! I substituted a few things based on what I had: a bag of frozen black eye peas for canned, two garlic cloves instead of garlic salt, omitted the salt, and (accidentally) crushed tomatoes for the 28 oz can, beef broth for water and bullion

Mexican Pesto

This is the best pesto ever!!! And I've made my fair share. I eyeballed the oil, substituted jalapeño for the chili and added 1/2 a lime. I don't typically salt my food, so left it out. Thank you for sharing!!! I'm gonna put this on everything!

Copycat Chipotle® Cilantro-Lime Brown Rice

Good tasting recipe. I usually add my stuff to rice before I cook it so I wasn't sure about this method. It was great. I made my rice a bit drier so it would absorb the lime. Definitely will make this again.

Bacon Pancake Strips with Maple-Peanut Butter Sauce

Made it this morning with rave reviews, for the syrup. Really that's what this recipe is about. I didn't measure (didn't want to clean measuring cups of pb), but just added the syrup ingredients to the pot, until it was the consistency I wanted. I used my own (whole wheat) pancake mix, and did cook the bacon on the side (picky eaters). But we ended up dipping the bacon in syrup or crumbling it and adding it to the top of the pancakes. Thanks for sharing! Will definitely make again.

Pesto Primavera Tortellini with Chicken

Very good, but a lot of steps. I've made many versions of this recipe, always sautéing my vegetables together. It prevents the zucchini from becoming mushy because I add my veggies depending on the time they need to be cooked. I substituted many things, including Italian sausage for the chicken. I skipped the asparagus and added more mushrooms. It may seem like a lot of veggies, but they shrink when you cook them - so add what you like. Very versatile recipe. I was hesitant to make a recipe submitted by a cleaning product... After all the worst part of cooking is the messy kitchen! But with my suggestion, cleanup is easier. I make the veggies and meat in one, large pan. Then add the cooked tortellini ( any pasta will do) and pesto. Oh ya, I make my pesto in large batches and freeze it in ice cube trays.

Easy Feta Chicken Bake from ATHENOS

Great, simple recipe. I marinated my chicken in lemon, olive oil, black pepper, oregano and parsley a couple hours before baking. I assembled the dish, pouring the marinate over the chicken and kept on the fridge until ready to bake. Easy "make ahead" dish. I think I'll save the juice to make rice or orzo.

Italian Sausage Soup with Tortellini

Excellent and quick and easy to make. I added my onions to the sausage when the sausage was about 1/2 way cooked. I used a can of fire roasted tomatoes instead of fresh, and used low sodium beef broth (4 cups cause that's what I had) I used fresh oregano. And added water as needed, about 1 1/2 cups. I also added a handful of spinach.

Rosemary Ranch Chicken Kabobs

I only used a couple tablespoons of oil. I used chicken tenders, marinated it overnight. And baked in the oven. Everyone loved them. I reserved some marinate for dipping and to pour over rice.

Easy Tuna Patties

This was very good. I added celery and Old Bay as suggested by other reviews. We placed them on sandwich thins and topped with lettuce and tomatoe. I'll make them again for sure! I bet the would even be good with salmon.

Waffles I

Great recipe. I make it with 1/2 whole wheat flour and 1/2 white flour that i sift. I also add a scoop (about1/4 cup) of flax seed. And to up the flavor I double the vanilla. I'll make a double batch on Sunday and save the leftover batter for a quick, healthy, hot weekday breakfast. Thanks for making my weekday morning a bit less hectic!!!

Roasted Brussels Sprouts

These were great! I sliced them in half and reduced baking time to 25 min. I was afraid the blackening would result in burnt flavor, but surprisingly it didn't. They were sweet and salty with a small after taste of the sprout. Definitely a keeper.

Oatmeal Peanut Butter Cookies

Definitely a light cookie. I was looking for a peanut-buttery cookie, unfortunately it did not hot the mark. I added some chocolate chips which made them taste much better.

Buffalo Shrimp

Awesome! I used 2TBaby Bam (Emerald's recipe) and 1T creole seasoning and just a bit of cayanne pepper for my young guests. Everyone loved it. These are the kind of recipes that this site was made for! I made about 3 pounds of shrimp and had enough flour seasoning for another pound.
