Jamie's Cranberry Spinach Salad

This was a super salad for my luncheon that I had with a few girlfriends. Everyone loved it, it was fresh and light. I served it with some warm garlic bread sticks and everyone enjoyed it. All 4 of my girlfriends wanted the recipe, which I graciously shared with them. I always have craisins in my house, along with almonds, but never thought to put the two together. I might try adding some bacon to the salad for a protein, as I think it would be a great fit. My girlfriend also suggested using the bacon grease in place of the oil for added flavor. I will definitely try her suggestions, but I do plan to make this salad for Thanksgiving. I think it will be a great salad that is light and fresh and wont take focus away from the Turkey, stuffing and all the other wonderful dishes. Great recipe. It is definitely a keeper!

Magic Pickle Dip

Being asked to bring pickle wraps for a family event this weekend, I was looking for an alternative that would pass for pickle wraps, but wouldn't need pickles. The one ingredient I didn't have on hand. I really didn't want to run out for pickles, and really didn't have time, so I found the review by Valerie, where she used dill pickle relish for this recipe. I had that on hand, so make this Magic Pickle Dip. It was a hit beyond belief. My family liked these even better than pickle wraps. The dill pickle flavor really comes through and by using the dill pickle relish is adds just enough pickle juice to keep the cream cheese spreadable. It was gone in no time, everyone wanted the recipe and I was told, I didn't have to mess with pickles again, if I promised to bring this dip in place of them. Loved the recipe, super easy, and I would recommend using dill pickle relish rather than dicing up pickles, unless you have pickles and no relish, then go with the dicing, as I think it would be just as great either way.

Pepperoni Cheese Balls

This recipe was really easy to follow and to make. I didn't add the butter as I couldn't see the reason behind the additional fat, but I did add a sprinkle of garlic and onion powder. I also used a bit more pepperoni as I just used what I had left from a previous recipe so I didn't measure it out. I did run the pepperoni through my food processor, removed part of it and then added the remaining ingredients. After letting it sit over night, I used a melon scooper and made small bite sized balls that I rolled in the pepperoni that I had taken out of the food processor prior to adding the other ingredients. I then placed them on a tray with toothpicks in them and kept them chilled until the last minute, as I didn't want them to become soft. I served them with Ritz style crackers and bite size pretzels. My guests enjoyed this very much with people liking them either way, there was no preference to pretzel or cracker. Being so easy to make, allowing me to make it ahead of time, I would definitely make this recipe again.

Chocolate Chip Cheese Ball

After reading the review by KIMAR, I decided to try this recipe. I was not in anyway disappointed. This cheese ball was easy to make, I had all the ingredients in my kitchen all ready, so I didn't have to go out to get ingredients. I did however use chopped walnuts in place of the pecans, but no one complained about that. It tasted just like cheese cake and although I served it during a football game where there were appetizers galore, it was the first dish gone. All my friends asked for the recipe and couldn't believe that it was that easy to make. Everyone thought I had spent hours preparing this cheese ball. I believe most of my friends will be making this recipe in the very near future as I printed copies of the recipe for everyone there. Even one of the single guys at the party wanted it. he thought it would be a great way to impress his girlfriend. Loved this recipe and will make it again very soon.

Busy Day Chicken

I loved this recipe. I was at the lake without an oven, in charge of making BBQ Chicken for sandwiches for the football game, and would never had been able to make the chicken had it not been for this recipe. I did read many of the reviews, learning from others trials and errors. I did stuff my chicken with onion and garlic, and placed it on balls of foil. I did spice up my BBQ sauce by adding chilli sauce and I did use a BBQ Chicken rub on it as well as adding a bottle of Sweet Baby Rays. I couldn't believe how easy it was to just rub, stuff and let it cook. It was even great to strain the sauce, remove the grease, and place the falling apart chicken back into it, less the bones and skin. Heating it up again for 30 minutes before game time allowed us to have perfect BBQ Chicken sandwiches. I even had coleslaw to top the sandwiches off, which was a great hint from one of the reviewers. Highly recommend this easy easy meal.

Double Tomato Bruschetta

I made this recipe for the football game this weekend. I loved it, found it very easy to make, especially now that tomatoes are in season in MN. I would however not make it again for a football game, as the appetizers tend to sit for longer periods of time, and the bread didn't hold up well. I would however make this as an appetizer for a dinner party anytime, where it will be eaten immediately. One of my suggestions would be to toast the baguettes prior to adding the mixture on top, which would make the bread hold up better. I also didn't have any sun dried tomatoes on hand, so just used more of my own garden tomatoes, but roasted them prior to adding them to the recipe. This is a great recipe, I would definitely make it again, but I would plan it better to insure I had all the ingredients on hand as some are not staples in my cupboard.

Pepperoni Crisps

I made this recipe for a football game this weekend to use along with some different dips. I made some with Cajun seasoning, and left the rest plain. The guys liked the plain ones dipped in buffalo sauce, the ladies liked the plain ones dipped in cheese sauce, the kids preferred the plain ones with marinara sauce. I can see this as a way to please many taste buds provided you have different sauces or dips to go with them, however, no one liked the Cajun seasoning. Pepperoni has a lot of flavor on its own without adding additional seasoning to them. I found that by baking them this way, they lost a lot of the salty flavor as well, which is very helpful for those on low salt diets, and most of the fat is soaked up in the paper towel so the pepperoni seemed healthier. I laid them out on a rack inside my jelly roll pan so most of the fat dripped off into the bottom, which also shortened my cook time as they were cooking all the way around at once. Great snack for the football season.
