Fireman's Apple Pie

This is a great dessert! I fudged a bit because I was using up some blemished apples that were given to me and there were more than the recipe called for. I also used apple pie spice that I had. I believe it's hard to ruin this recipe, which makes it perfect for me!

Creamy Au Gratin Potatoes

The best au gratin potatoes I've ever served! I doubled the recipe and used my mandoline slicer for the onions and potatoes. Using speed-bake, even the double recipe was done in just over an hour. I removed the foil for the last 12 minutes or so for browning. Next time, I may add garlic and/or precooked bacon pieces, and, following Joy's idea, I may precook the onions and potatoes (separately) in the microwave to speed it up even more. It's a lovely recipe as is, but I love to experiment, so...

Cinnamon Rolls III

This recipe is wonderful! I've had rave reviews from everyone who has tasted them. I did substitute - didn't have pecans, so used walnuts, and made my own brown sugar with white sugar and molasses. I may try adding raisins the next time I make them, and I will use pecans when I have them.

Corn Fritters Canadian Style

My only change was that I deep-fried them, dropping by rounded tablespoons into hot oil. Tasted great, perhaps a little doughy. I may try lightening up on the flour a bit next time, and add a tsp or so of sugar.

Oat-Bran Chocolate Chip Cookies

I'm giving this recipe a 5-star rating. I usually make my own brown sugar (1-2 T molasses per cup of white sugar), so added 1 T molasses to 1 1/2 cups white sugar, and, following Sheba's idea, used bulk bran in place of cereal. They came out great, and I'll be making them again soon.

Soft Peanut Butter Cookies

The flavor is great! However, I think I made a couple of errors. I used butter instead of margarine, and a brand of peanut butter we tried (it was cheap) and didn't much like. Seemed like a good idea at the time...however, it was too dry (I think) and difficult to make balls that didn't fall apart. In fact, they did split and crack when I did the fork thing. Because the flavor was good, I'll try it again, with the proper ingredients!

Oat Bran Muffins

Best recipe for bran muffins I've found. I just baked these and they're superb! I mix up my own (ultra) brown sugar and used my homemade applesauce,and it turned out just great! I'll certainly be baking these again!

Snickerdoodles II

Just finished baking these, using butter, and they are the best! I used a 3/4 oz ice-cream-type scoop to make the balls and actually got 36 cookies from this batch. I'll be making them again - very soon!

Bread Pudding II

I've made this recipe several times, and it is delicious! I double it and use a 9x13 pan. I have discovered that different types of bread may affect the outcome, "wet" or "dry", but it's always good, no matter which kind I use!
