I suggest that you get a copy of the book Victory Over Diabetes (William H. Philpott & Dwight K. Kalita). I used the information in that book to recover from diabetes and diabetic retinopathy (caused by food intolerances in my case). If your husband and mother-in-law are interested in alternative medicine, I think that is definitely the way to go.

Stacie - You can check out the recipes in my recipe box if you like. The vast majority are suitable for people with diabetes and common food intolerances.

Try not to think "diabetic", better to think healthy or "paleo". Diabetics just really need to be mindfull of carb intake and try to increase exercise-even walking is a huge help. My doctor also recommended the "South Beach" diet and it is very helpful.

You need to balance your food intake. Too much protein is not good for your pancreas, but with every meal you need a little. Eat almonds oe other nuts between meals. That has help me quite a lot. Don't worry...that makes your sugar go up. I have found that when I am in a slump with my diet, journaling everything that I put in my mouth, keeps me on track.

Now that it is the First Day of Fall, I NEED to start using my New Crock pot that has just been sitting around, even with Reynolds slow cooker liners inside. I've pulled some nice Fall / Winter Recipes, I just need some encouragement to actually start doing it. Anyone out there that also has a slow cooker, I'd love hearing from you.
