Taco Seasoning I

Italian Sausage Soup

I love this soup. It works with almost any modification depending on what you have. Just recently some kale and collards from last year's crop popped up in our garden and I used them in place of the spinach. I had some frozen chopped zucchini from last year also and that went in too. This is a four-season recipe.

Pear Bread

This was really goood but the only reason I rated it four stars was because of the amount of ginger. I'm not a big ginger taste fan and the smell was rather strong while baking. It mellowed though after it was finished and the ginger smell wasn't as strong tasting. I will make it again but will cut back on the amount of ginger. It's a great moist bread and really needs nothing else on it to serve.

Shrimp and Quinoa

I made the recipe for the first time and I followed the directions exactly. I had high hopes since the recipe contained many of my very favorite ingredients, but as a hot dish, found it very bland and unappealing. There were lots of leftovers and the second day we liked it a little better as a cold dish. Today I'll try stuffing pita bread with the cold salad to see if that is a little better. For the time it takes to make this, I'm not sure I'll make it again. I might add I'm not a big fan of quinoa or couscous...it's a texture thing, but I wanted to try. Maybe brown rice would be better, and adding garlic might help too. My personal opinion is that the recipe definitely needs tweaking.

Bar Cookies from Cake Mix

I misread the recipe and it still came out great. I added 3/4 cup brown sugar instead of 1/2 cup and the batter was very stiff, but it was very good. I will make this recipe again, this time won't have "3/4" in my head. For the chips, I used one cup white chocolate chips and 1 cup semi-sweet chocolate chunks and did use chopped walnuts. I like the versatility of the recipe, you can add what you have on hand or like.

Deb's Scallops Florentine

Way too salty! I am not a regular user of Old Bay Seasoning and after I made the dish, I read the first ingredient of Old Bay was celery salt. I barely added any salt to the recipe since the cheese was salty enough. I liked everything but the saltiness, so when I make it again, will cut way back on the Old Bay and add no salt whatsoever. The first time I make a recipe I make no substitutions and so I followed this recipe exactly. It has possibilities, liked the combination of scallops and spinach, but the salt took most of the enjoyment out of the dish.

Cauliflower Gratin

I had to make some substitutions based on what I had so that's why I rated it four stars. Instead of all cauliflower, I used a bag of frozen broccoli and cauliflower, and substituted canned fried onion rings instead of the bacon. Usually my husband doesn't like anything made with canned soups but he did like this one and so did I. I had some really good local swiss cheese too so that made it special. I will make it again, next time without all the substitutions. It's a good recipe.

Honey Baked Apples

This was an excellent dessert. I used some of the suggestions other reviewers made such as using apple juice instead of water and adding some cinnamon. The apples I used were Granny Smith apples and I did add a scoop of vanilla ice cream to serve. I will definitely make this again.

Sausage Cabbage Skillet

This was good and I'll probably make it again. The only changes I made were to add some caraway seed, some Polish seasoning (Krakow Nights from Penzey's) and two diced apples. It was a very good meal for a cold winter night.

Pumpkin Apple Streusel Muffins

I used the recipe as written but baked them in mini-muffin cups for a community meeting. It was a little tricky figuring out the correct baking time, but between 15-20 minutes depending on your oven seems to do it. These are very moist and delicious and I will make them again, this time regular size. I would also like to try the substitutions others have suggested using brown sugar for the white and applesauce for the oil. If you make the mini-muffins, you really need to chop the apples in very small chunks. Yum!

Toll House® Blonde Brownies

I made these for a community meeting and was asked for the recipe. They are delicious and very easy to make and I will definitely make them again. The only thing I added was to sprinke some toasted chopped hazelnuts on top that I had on hand from the King Athur Flour catalog. Otherwise I used the recipe just as is. Definitely a keeper.

Pesto Chicken 'n' Ravioli

I liked everything but the pesto. I thought it made the whole dish too salty and I only used half of what was called for in the recipe. My husband like it more than I did. I would make it again but find a different sauce.

Spaghetti Squash with Pine Nuts, Sage, and Romano

Really, really good. I don't like recipes that overdo a veggie and this was perfect. Since I didn't have any pine nuts in the house I substituted roasted sunflower seeds and added a little bit more of the fresh sage than called for. I have a slow oven so it took longer than the time called for in the recipe and I did add a little water to the pan and covered it with foil. I will definitely make this again.

Crawfish Etouffee Like Maw-Maw Used to Make

We liked this recipe a lot but next time I would add cajun seasoning, this recipe needed a little more heat. Instead of water I used an eight ounce bottle of clam juice. Next time I'll play around with it a little more.

Shrimp Scampi Bake

This was very good as is. I was short some shrimp so I added some fake crab meat that I had left over from another recipe and it worked just great. I garnished the dish with more green onion. My husband commented that he did taste the mustard but he did like it. I served it with rice and green beans and it made a good Sunday supper. It's definitely a keeper and I will make it again.

Sour Cream-Rhubarb Squares

I made the recipe exactly as written but only needed to bake it 40 minutes in a glass pan. Loved it, thought it was very moist and a great way to use rhubarb. The next time I make it though, I will double the amount of rhubarb as some reviewers suggested. I did think the directions were a little confusing at first..try reading side to side instead of down after printing. The recipe is a keeper.

Green Beans with Hazelnuts and Lemon

I needed to make grean beans for a large group of people and this works great in multiples I did eliminate the nuts because I wasn't sure of allergies and did add lemon juice which was suggested by other reviewers, as well as some dried thyme. I garnished it with lemon slices and fresh rosemary, but fresh thyme would have been better. We really liked it and I will make it again for our family and this time will include the hazelnuts. It's a keeper.
