Fabulous Zucchini Grinders

The 1st time we made this it was ok, but it had plenty of potential. The 2nd time around it was FANTASTIC! Here is what we did: 1) We did NOT toast the rolls first as they came out too crunchy. 2) As others suggested, we dug out some of the bread after we semi-split them to allow more room for the good stuff. 3) We used a mix of sliced & shredded mozzarella. The slices went into the dug out part, some of the shredded went along the bottom of the unsliced part of the roll. This prevented the rolls from getting mushy. 4) We added sauteed onions & garlic. This added to the flavor A LOT!! 5) We also sauteed the zucchini until it was MORE than tender. 6) We added Lightlife Smart Ground "Beef" crumble for extra protein. I'm sure real ground beef would be just as good. 7) Topped the rolls with with the remaining shredded cheese. This will be become a regular in our home! Enjoy!

Chicken with Couscous

How disappointing! My husband & I were really looking forward to this dish. It was surprisingly bland. We even thought we'd take the chance and put all of the jalapenos in that the recipe called for even though other reviewers warned against. In the end it was just ok, but nothing special. Actually, the dish wasn't spicy at all. I guess it's because I was careful not to let any seeds or membrane (the spicy parts) fall in when I was chopping. We felt that the recipe was missing something very important, we just couldn't figure out what it was. We decided that this dish was not worth tweaking. Will not make again.

Teena's Spicy Pesto Chicken and Pasta

My husband & I really enjoyed this recipe. It was quick, easy and yummy. I did make a few changes, but not many. Since we don't eat meat, I used Trader Joe's Soy Chicken. We like pesto, so I added more. I also sautéed some onions and added some defrosted peas at the end. Yum! Will make this again.

Jalapeno Pepper Appetizers

These were wonderful!!!! Not too hot at all. I took some of the suggestions others gave about adding some Ranch Dressing Mix to the cream cheese. I was so happy I did, it gave such a great flavor. My husband & I are vegetarian so I omitted real bacon. I used Morning Star Farms Bacon Strips instead. In the remaining 10 mins of cooking time I wrapped the jalapenos with the defrosted "bacon" strips and sprayed them with a bit of oil so they wouldn't dry out. The result was a success! Thanks for the recipe. I WILL be making these again.

Chocolate Cream Cheese Frosting

I was disappointed with this frosting. I followed the recipe completely. The flavor was average. The consistency was thin. I guess if I experimented with it, I could make better. However, I don't think the base of the recipe was good enough to keep trying. I will look for another recipe when I need a frosting again.

Dark Chocolate Cake II

This was the first time I had ever baked a cake. This fact was painfully obvious by the look of it. The middle had completely sunk in. However, the pathetic look of my cake did NOT affect the taste of it. It was sooo good. My husband & I love dense cakes and this one was perfect. It was heavy and dense, but extremely moist and flavorful. I will be making this cake again with one only change... a bundt cake instead! ;)

Mexican Corn on the Cob (Elote)

My corn was just ok. This is most likely due to the fact I did not have access to a grill and had to put them into the oven. I will only try this recipe again if I can use a grill.

Chiles Rellenos Pie

I made this meal for my husband. He is a huge fan of the traditional chiles rellenos. He thought it was fantastic. We don't eat meat so I omitted the chicken. My only complaint was that the recipe did not say how long it would take for the chiles to roast. As a result I think I over-roasted them. Next time I make this recipe I will shorten the roasting time. Other than that, this dish was a hit. We can't wait for dinner tonight to dig in on the leftovers!

My biggest complaint was the texture. It just seemed way to thick. I was constantly adding water, but it never seemed to be enough. I would possibly consider making it again for myself, but I would NEVER make it for guests.

Lentil Burritos

I must admit that my husband and I weren't blown away by this recipe. However, it is such an easy lentil dish that I may try it again with a few tweaks. We weren't to big on the zucchini, so next time we may try pumpkin or butternut squash instead.

Baked Potato Skins

Yum!! We don't usually indulge with restaurant potato skins. When we saw this home baked version we had to give it a try. They were delicious! I will be making these again! However, next time I will double the oil mixture. I felt I didn't have enough to cover the entire potatoes to my satisfaction. Enjoy!

Vegetarian Meatloaf with Vegetables

We were very pleased with this recipe. I am giving it 4 stars because I didn't follow it exactly. I omitted the vegetables and the tomato sauce. Instead I put 1/2 cup of chili sauce in the bottom of a loaf tin and then added the meatloaf (I pressed the loaf in attempts to avoid crumbling during slicing). I also added fresh tarragon, rosemary and sage. I used others suggestions and went down to 1 tbls of Worcestershire sauce. After cooking I let it sit for 15 minutes as suggested and then popped it out on a serving plate. It came out perfect. Some slices did crumble a little, but nothing to complain about. I will make this meatloaf again!

Black Bean and Salsa Soup

My husband & I LOVE this soup. It's not only delicious, but super easy. This soup is fun to play with. Depending on our moods and what is in the pantry, sometime we add garlic, jalapenos, more cumin, corn and fresh cilantro. Enjoy!

Leek and Cheese Quiche

My husband and I did enjoy this quiche. We made a few changes to make it a little healthier. We used Egg Beaters, reduced fat swiss cheese (Jarlsberg Lite), and fat free condensed milk. I highly suggest that you use a deep dish pie crust. We also had to bake it for an additional 15 minutes. It came out very tasty and we will make this recipe again.

Rich and Simple French Onion Soup

Excellent! Since we are vegetarians, we made a few changes. We used vegetable broth and added "Kitchen Bouquet", a browning and seasoning sauce. We find it helps the veggie version.
