Easy Pumpkin Muffins

These are extrememly easy to make which is nice, deserves 5 stars just for that! But like other reviewers, I thought that they needed to be smoothed out with a small spoon or spatula prior to baking. I didn't like the cloves in the recipe. I think this spice is too overpowering...it was all I could taste. I used a couple teaspoons of pumpkin pie spice. I used an organic cake mix, just to make them a little healthier for my kids. All in all, I think next time I make them I will prepare the cake mix as directed on its box, like one reviewer had stated, as well as eliminate the cloves. Oh, & another plus is how moist they are!

Amish Breakfast Casserole

This recipe was fabulous. I made 2 casseroles for 6 people. I made one of the casseroles bacon & the other sausage. The bacon one was gone first. Though the sausage one was delicious, the bacon one was clearly the hit. Everyone enjoyed a second helping. I believe it is the cottage cheese & swiss cheese that make this recipe. I followed the recipe perfectly. I made no changes to the ingredients, however, I did broil the casseroles for 5 minutes at the end of the baking cycle to brown the top. The next morning when my guests awoke, I said lets go to breakfast...but they requested we have leftover breakfast casserole instead! There was plenty leftover to feed everyone again & it reheated beautifully.

Sweet and Crunchy Salad

This is the best recipe I have found for Chinese Cole slaw. I bring it to every party and BBQ & is always a hit. I can practically eat the whole thing myself in several sittings. Some people like chocolate...I love this vinegary cole slaw!! You can change it up with using beef ramen instead of chicken. I omit the water chestnuts & sometimes the mandarin oranges depending on if I want it sweetened up by the oranges. Pour the dressing on just before serving so it won't get soggy. You'll love it & if someone has never had a salad like this one, they'll ask you for the recipe!

Hash Brown Casserole II

This is a good recipe. BUT it needs more zing. It is bland & a little sour from the sour cream. I used the little square hash browns instead of shredded & added a little cream cheese. But here is what really made it good...kinda found this out on accident. I had made con queso dip with Velveeta & Ro-tel...to serve with tortilla chips for our Memorial Day BBQ. So what was delicious is putting a spoonful of this dip on the potatoes. You could actually make the dip and mix it into the potato mixture prior to baking. Try this, you won't be sorry... the potatoes need more cheese anyway & the Ro-tel will give it that zing.

Alaskan Salmon Chowder

I tried this recipe to use up some frozen salmon filets. It was a hit with the family at dinnertime. I used a can of chopped green chiles instead of the green pepper. Also, I added a small yellow squash in addition to the zucchini. It came out hearty and delicious.

Soft Chocolate Chip Cookies I

I have been looking for a good chocolate chip cookie recipe. I remembered that my Mom's used shortening. I believe shortening makes a better chocolate chip cookie. This recipe makes super soft cookies. My husband does not like chocolate, but he loved these cookies. I baked at 350 degrees for 9 minutes for the perfect cookie.
