Broiled Tilapia Parmesan

Okay - I'm new to the whole fish scene. I don't care for strong tasting fish and have NEVER cooked it myself until recently. This was my second recipe. I could not have been more pleased! I actually had seconds. The toping is easy to make and talk about a time saver. This will become a standard in our house.

Baked Pesto Chicken

Talk about quick and easy and a lot of pizzaz for very little effort! This is both delicious and impressive to the eye. My husband and I enjoyed this very much.

Roasted Chicken with Risotto and Caramelized Onions

This is awesome! If you're looking for something to warm you up or need a "new" comfort food, this gets my vote! This and a green veggie and you're all set! Actually, I've even added the green veggie into the mix and made it a one pot meal. Just par-cook the veggie and add it in towards the end of the cooking.

Morning Glory Muffins

These were really good - next time I'll grate the carrot a little more finely. Other than that, these are great! I did use whole wheat flour instead of regular, substituted splenda for the sugar and applesauce for the oil. I might try to freeze some too, since I couldn't eat them all before they went bad.

Burrito Pie

Yummy! I tried this last night with a few modifications - we had some ground venison which I subsituted for the ground beef and I altered the portions a bit, but WOW! I kept the taco sauce to the mild variety and made sure to use just a bit to top each layer of the dish rather than putting it into the filling. My husband (who doesn't care for mexican food) loved it! This one's a keeper - hot, quick and satisfying, one helping's enough.

Chicken Enchiladas II

This is a great recipe. My husband, they stereotypical "meat and potatoes man" absolutely loves them too. I made a couple of small modifications. First, I double the recipe so we can have some left overs for lunches, also, I add some chopped cilantro (1-2 T, depending on your taste)as well as some fresh squeezed lime juice both in the filling, and in the sauce. It's a HIT!
