THE Pasta Salad

This is a good recipe. If you don't want it so thick, try letting the pasta cool completely before combining with the sauce. It's the same principle as allowing boiled potatoes to cool before adding mayonnaise.

Sweet Corn Tomalito

I love this dish! The only change I tried was not thawing the corn, which, for some reason, made it lighter in texture, fluffier. I won't go back to thawing the corn! Thanks for the recipe.

Vicki's Hush Puppies

I don't know where Vicki C is from, but it's not Louisiana! We don't make our hushpuppies so sweet or fluffy. Also, we usually add hot water to ours, so the process is also different, which wouldn't have been a problem had they tasted right. I did like the fact that the little suckers turned themselves over in the oil, but that also tells me there's too much baking powder. However, hubby liked them so this recipe will get a couple of stars. Sorry, Vicki, I'll post my old recipe when I get around to it!

Creamy Coconut Cake

I have made this twice, and everyone loved it. It is not as good, though not nearly as much work, as a traditional coconut cake, but, oh boy, will it do in a pinch! If you are thinking of trying this for the first time--well, it tastes just like a Pepperidge Farm coconut cake that you get from the freezer section of your supermarket.

Portuguese Sweet Bread I

This was fabulous! We are overseas and don't much care for the very stale bread available at the grocery store. This recipe has enabled us to have toast, sandwiches and bread with meals. Thank you, Jennifer.

Jeanne's Slow Cooker Spaghetti Sauce

This is terrific. I made a vegetarian version and used it for Chicken Parmigiana last week and Stuffed Shells this week. It also freezes beautifully. Thanks, Jeanne! I owe you one.
