Basic Crepes
This is my go-to crepe recipe. If I'm just making sweet crepes I add some sugar to the mix. They freeze wonderfully if you place a piece of wax paper between each one and then put in a zippy bag. You can peel off as many as you want and by the time your morning tea has brewed your crepes are thawed. Also, there is no need for a special crepe pan, just get a regular non-stick pan and never ever use anything metal on it, the scratches are what makes the crepes stick. My pan is only used for crepes and the only utensil I use on it is a wooden chopstick to free up a stuck edge. As soon as the crepe begins to move easily around the pan when you shake it a bit it's ready to flip. After a few practice flips you'll be flipping them like an old diner cook in no time :)

Fudgy Brownies I
These are hands down the easiest brownies (and some of the best tasting ones) I've ever made. I think the secret is the boiling water. When you first pour it in, it looks like it's going to be a bit soupy but after a few more turns of the spoon (I only up use a wooden spoon when I bake brownies) and it thickens up nicely.
