Pecan Pie

I didn't try it, because it was eaten before I had the chance! Everyone raved about it. I changed the butter to margarine and the corn syrup to light because those are what I had on hand, and it still turned out great.

Boston Cream Cake

This recipe was a great hit. When I was leveling off the bottom cake, my husband asked me to carve out some so I could fit more pudding inside. I did, and it was really yummy, the only thing I would suggest is to make sure not to carve to close to the edges so the outside 'wall' doesn't break and the pudding leak out.

Pineapple Upside-Down Cake V

I converted to a 13x9 and doubled the sugar and butter for the topping. It was a good recipe, the cake wa super moist with the juice in it, but I wasn't as impressed by the entire thing as I thought I would be. Even though we all like it, we didn't love it, so I'll be trying a different recipe next time. A big plus though, it was super easy, so it would make a great potluck cake.

Caramel Apple Dip

This stuff is AWESOME! And super easy too! I will use it for all my get togethers now. Oh, one thing about the recipe though, it says to serve immediately, so I waited until the last minute to make it. I now know though, that it keeps in the fridge for a day or two just fine, with no change in flavor or consistancy.

Cajun Sweet Dough

This made GREAT turnovers! I followed the recipe exactly as directed, EXCEPT, I had no butter on hand, so I used a stick and a half of margarine instead. It is a sticky dough when you remove it from the fridge. To remedy this, only roll half the dough at a time, and use a medium-heavily floured surface to roll it out, keep your rolling pin floured well also. If it doesn't work out well on the first roll, knead the extra flour in that stuck to it, then try again, it will be easy to work with then.I made small turnovers, about 4" across when unfolded. They baked nicely at 350º for 23-25 minutes.

Nuts and Bolts Party Mix

This is a very good recipe. I did make some changes to suit my family's tastes. I agree with a previous reviewer that it would probably be too salty for us, so I replaced garlic salt with garlic powder, and replaced season salt with Mrs.Dash Table blend. If one is worried about the oil, I'm sure it would turn out perfectly with Enova oil also. I replaced the pretzel nuggets with goldfish, and kept the slim pretzels called for in the recipe, then omitted the pound of mixed nuts and just stuck with peanuts. I put the dry stuff in a clean paper bag, closed the top, and shook it to mix them up before putting it in the cooking dishes. Then, when it was done cooking, I returned it to the bag and shook it again, to even out the flavors of the two pans.

Dirt Cake III

This stuff is AWESOME. I prefer to 'frost' the top with the Cool Whip, instead of mixing it in, but I'm sure it's great either way. Also, the recipe doesn't specify to soften the cream cheese, but if you do it mixes in much easier.

Ribbon Salad

This was a hit at a dessert banquet. I lightly sprayed my pan with cooking spray and it didn't stick at all. I followed another users suggestion to wait to make the milk until ready to use, and I wish I hadn't done that, because it needed some time to set up. Also, I didn't think it would need refrigeration after the white layer, just the jello, but I was wrong there too. The two times I didn't cool it, the white and color mixed. I waited to make each jello until I was ready to use it, then I dissolved my jello in 1c. of hot water, then added 1/2c. ice water to make it quick set, then fridge for 30-40 minutes, and that worked wonderfully. Even with mistakes, it looked great and tasted good.

BBQ Chicken Sandwiches

I put 3lbs of boneless skinless chicken breast in a crock pot, then put all the sauce ingredients on top of that. I cooked it on low for 8 hrs then shredded the chicken pieces. It was a huge hit with the whole family. I served it with homemade coleslaw, in which I substituted half of the vinegar in the sauce for tobasco, to give the sandwiches some zing. Next time, the only thing I will change, I will use tomato sauce instead of ketchup, for the same results with a lower price tag.
