this was suprisingly yummy. i didn't tell my family there was eggplant in it until after they all said they liked it, and even my grandmother (who said she wouldn't eat eggplant) has re-thought eggplant...

Corn Dog Muffins

this was pretty yummy. next time i will cut my hot dog halves into strips and arrange evenly in the muffins so there is more hot dog in every bite. This was a fun idea and my kids liked it alot.

Fresh Fig Cookies

This was a pretty good recipe. I subbed splenda for sugar, and let my kids eat all they wanted. They were increibly soft too, in a yummy kind of way.

Giant Chocolate Chip Cookie

YUM! I used a 12 inch pan, and put an airbake cookie sheet underneath to catch drips (we didn't have any though). It was excellent. I lowered the heat to 325 and cooked longer but it still wasn't quite all the way done in the center, which was perfect. I followed the recipe exactly, except I used light margarine instead of butter.

Jalapeno Hummus

i didn't realize until after I started that i was out of jalepeno peppers. i used a can of mild chili's instead. this is an excellent recipe. I also used the whole can of beans but didn't increase any other recipe portions.

Chocolate Marshmallow Grahams

These taste VERY MUCH like no bake cookies, so they would be a great recipe for someone who wanted them but was avoiding oats. The next time I make it, I'm going to line bottom of the pan with extra whole chocolate grahams, to give it something like a crust.

Tartar Sauce I

I like to mix half mayo and half miracle whip, to give it a little zip w/out it tasting too much like salad dressing. It's also lots better if you let it sit for that hour or two, but it does rock even when you take it straight to the table too.

Easy Slow Cooker Chicken Wings

Great sauce. I agree w/other reveiwers that it would be good on legs. I put the wings in the crock pot on high for four hours, removed the wings to an oven dish, added some corn starch to the sauce to thicken, poured it over the chicken in the pan, then roasted them in a 300 degree oven for an hour or so to help the texture. They were a hit at a Super Bowl Party. Oh, a side note, most frozen chicken wings are ice glazed, and if you thaw them or rinse the glaze off before using, your recipes will be MUCH less watery.

Cranberry Sauce II

I used Splenda instead of sugar, and since some other reviewers complained that it didn't thicken properly, I added about a Tbsp of cornstarch to the cold water befor mixing. It turned out great, and to top it off, it's ZERO Weight Watcher's Points!

Easy Pumpkin Muffins

I make these quite often at home. I use spice cake, substitute spices for pumpkin pie spice and use 1/2 C. egg beaters (or equiv.) I measure 1/4 C. into each muffin well. Made this way they are 2 Weight Watcher's points each. I also like to "frost" them just before eating with (fat free) Cool Whip. My husband hates diet foods, but I have to hide these muffins from him if I want to keep any, they are so yummy.

Grilled Bacon Jalapeno Wraps

We make these often at home. As another user suggested, I like turkey bacon better, but some of my family prefers regular. 1/2 a piece of bacon works great, and I like to freeze the constructed peppers (spread out on a cookie sheet so they don't stick together) prior to grilling, so the cheese doesn't melt as much while the bacon is cooking.
