Marrakesh Vegetable Curry

Great addition to my recipe box!! I used a can of coconut milk instead of OJ and it turned out wonderful :)

This was a nice change from traditional pizza :) I really enjoyed the tofu. I used more sauce as well and had no problems with the potato not being crispy enough. I used some different toppings as well only for lack of having all the ingredients listed.

Seven Layer Tortilla Pie

So fun to make!!!! I used only 5 layers as well and cheers to the avocado garnish!! I found it a little too beany but everyone else enjoyed the beanyness. I also added corn :)

Hearty Turkey Stew with Vegetables

I'm a vegetarian and was looking for a good hearty root vegetable stew.....perfect!!!! I simply replaced the chicken stock with veggie stock and the turkey with tofu. I've also added turnip!!

Pear Cake

Could have been slightly more moist but an overall treat. Used a brown sugar sauce and it complimented quite nicely. I was looking for a more peary flavour.

Brown Sugar Sauce

Used this sauce as a topping for a pear cake. Turned out yummy!!! Easy to make!!! Used vanilla soy milk which gave it a very nice creamy texture and flavour. Omitted brandy

Red Cabbage

This recipe is very similar to one that an older Dutch women used to make me when I was a kid. A little bit more tart but I guess it would depend on the size of cabbage. I would put a little more sugar and a little less vinegar next time.
