I am a stay at home mom - mother of three. I am married to a wonderful man who is very supportive. I love cooking, reading, gardening and singing. God and my church are a big part of my life.
My favorite things to cook
I LOVE to cook special desserts and Italian food. I used to think food had to be elaborate and complicated to be good, but these days, I am looking for healthier, simpler ways to cook. Some of the best foods we enjoy in life are best enjoyed in their simplicity. My latest favorites are dipping fruits and other favorites in chocolates and preparing fish.
My favorite family cooking traditions
I try to make one special dessert a week usually on the weekend. The holidays are always a fun time for trying new desserts and dishes. On Christmas morning, I try to make something special ahead - Cinnamon Rolls, a breakfast casserole or maybe a coffeecake to enjoy after opening presents. Thanksgiving is a shared venture in our family between me, my mom and sister. We all are pretty good cooks so the combination of all that good food is a treat. My favorite dessert is pecan pie and my Nanny Huff's sour cream pound cake. Making sugar cookies and fudge is always a favorite for Christmas, of course.
My cooking triumphs
It took me a while to get a good chocolate chip cookie recipe to measure up to my husband's expectations (his favorite). I have that recipe down now and have also finally learned to make wonderful pie crusts and biscuits.
My cooking tragedies
Blueberry pie DRIVES ME CRAZY. I follow the different recipes I have tried to the letter, and every now and then they still turn out soupy. I have read that the acidity is what causes it to be unpredictable, and my greatest successes have been with tapioca as the thickener, but I'm not sure it is my favorite for taste. It's a work in progress :)!

Banana Crumb Muffins
These are very good muffins. They have a good consistency; are not dry or crumbly and are more cake-like.

Beth's Chocolate Chip Cookies
Can't beat this recipe as far as I'm concerned! I use this as a base for all kinds of cookies . . . various chips, monster, oatmeal, etc. The only thing I don't like is that they tend to get dry after a few days. I usually store them in the freezer after the first day to maintain just-baked freshness.

Judy's Strawberry Pretzel Salad
