Grilled Chicken Burgers

This was just OK. I cooked the burgers for 5 minutes on each side and they were a little dry. Maybe a few more veggies would have helped. I didn't have the Old Bay Seasoning and added lemon pepper seasoning instead. That might have made a difference.

Grilled Shrimp Scampi

Jo's Rosemary Bread

My family loves this bread! I used fresh rosemary and fresh oregano instead of the Italian seasoning. We dip it in olive oil, herbs, and balsamic vinegar when it is baked. I also used it for a sandwich the next day.

Super Al's Cocktail Sauce

This sauce is excellent and costs very little to make. I will never buy another jar of cocktail sauce. It makes exactly enough for 2 people. Don't change a thing!

Penne Pasta with Spinach and Bacon

My husband and I loved this recipe. I have made it twice. I used Canadian Bacon to make it even healthier and added grated Parmesan Cheese and pine nuts. This recipe is a great starting off place for many variations! I'd like to try it with shrimp and chicken and other vegetables. Thanks for a quick easy recipe.

Waffles I

I made this recipe in my blender. It was so good. I sprayed my waffle iron with non-stick cooking spray and had no problem popping the waffles off. What we didn't eat, I wrapped in waxed paper and stored in a freezer bag for toasting during the week.

Orange Party Cake II

This was my husband's birthday cake this year. His three sisters loved it and I copied the recipe. It was very moist and the coconut flavor was delicious. In my oven, it took a little longer than forty minutes to bake. The amount of the glaze seemed excessive to me but not to my sisters-in-law. I will definitely make this again. Thanks!

Marinated Pork Strips

Awesome Chicken and Yellow Rice Casserole

I used shortcuts for this recipe but all-in-all, I loved it. Instead of the whole chicken, I used some pre-cooked shredded chicken that I had leftover from my crockpot. Also, I added chopped garlic with the veggies. For the rice, I used Mahatma Yellow Rice Mix. Over the top on my portion, I poured some Lizano sauce that I bought in Costa Rico. My husband liked his plain. Great Recipe! We're eating the leftovers tonight.

Dilly Romaine Salad

This is a delicious salad and dressing. I prepared it for dinner and ate the rest for lunch the next day. I didn't have the cherry tomatoes but added sliced carrots, chopped almonds and a few dried cranberries. Thank you, Catherine, I will surely make this again.

Shrimp Fettuccine Alfredo

My husband said to save this recipe. I added the shrimp at the end of the cooking time and used fat-free half and half. Next time I might add some sauteed mushrooms but it was great as it was.

Asian Mushroom Soup

We loved this soup. It probably deserves 4.5 stars. I used enoki mushroom and udon noodles from the asian market. It was more of a stew than a soup. It made a lot and we had it for 2 dinners and several lunches and I froze the leftovers.

Pumpkin Black Bean Soup

Thank you, REEDYGAL. We loved this recipe and will make it again. Didn't use the ham as another reviewer suggested and substituted cider vinegar for the sherry vinegar. Very good in the fall when the outside temperatures go down.

Thai Shrimp and Cabbage

This was a quick, healthy and delicious dinner. I followed all the directions to the letter except my shrimp were a little smaller and I put the red pepper on my portion (and not my husband's). I will definitely use this recipe again.

Chinese Chicken Soup

We had this soup for dinner tonight. I used one cooked chicken breast and a 12 oz package of fresh stirfry vegetables. It was light and delicious. This recipe is a great basic one, many different spices could be added to jazz it up. My husband doesn't like too much spice, so I left it rather plain. Would definitely use again for a quick dinner or lunch.

Bran Flax Muffins

I made these muffins to use some flax seed that I purchased on sale. They are delicious and very moist. The recipe does make 15 muffins so I freeze the left-overs in a zip-lock bag. If you pop some out in the morning before work, they are thawed for a mid-morning snack! Last time I made them, i added a little mashed sweet potato. This is a good basic recipe. I'd like to try it with the addition of cranberries.

Chicken Caesar Salad

I WOULD MAKE THIS RECIPE AGAIN. USED CIDER VINEGAR BECAUSE I DIDN'T HAVE THE WHITE WINE VINEGAR AND ONLY 1 TSP OF THE SEASONING SALT BECAUSE I THOUGHT IT WAS TOO MUCH. VERY EASY AND FAST. MY DAUGHTER, HUSBAND AND I ATE EVERY BITE.

Chicken Tortilla Soup

Very good, healthy. I used homemade chicken broth and cooked chicken. Instead of a package of taco seasoning, I sprinkled a little sea salt, black pepper, chili powder, onion powder, garlic powder, paprika, cumin and oregano over the chicken broth.

My Favorite Beet Salad

This was very good. I also scaled it down to 2 servings. Very fresh. I am not a beet lover but was given one by a friend. My husband loves beets and we are trying to eat healthier. The flavors were very complimentary.
