Jollof Rice

Good. I thought the spices would be weak but there was pleanty of spice. It was good but not wow- it does make a lot of food- use a big pot.

Jackie's Sausage Soup

Good soup, but it lacked that something to make it awesome. However it could have been my sausage- it was rather bland. In the future I might add paprika/ tobasco/salsa/ or use a spicy sausage for more flavor. Overall- a good way to use sausage.

Shortbread Cookies II

As a shortbread cookie these are great. But I do not think shortbread cookies have much flavor so I used them as a base cookie--I made thumb print cookies - apricot and strawberry jelly (store brand jelly)- and they were great. These cookies also make good cut out cookies- I used a rectangle cutter with a frill edge- and then made them into frosting sandwiches. I agree with a previous writer to sprinkle sugar on them. Good base- great shortbread but I like more flavor. 5 stars for great shortbread and a great base

Special Beef Rendang Curry

Tasty and quick (once you get everything cooking). I would actually cook the meat in the coconut milk mixture for the stated time- it is still moist and tender but it infuses the flavors. I also added carrots, potatoes, and green peas. A note on the curry paste- it is usually sold in Asian markets in cans the size of tuna, If you buy this size, half a can will make a pretty spicy dish. Usually a fourth of a can will impart pleanty of flavor if you like some spice but not too much. Enjoy!

Salmon with Mango and Brie

Granted I didn't use Brie, I used Feta and swiss. I also followed another's advice to add garlic (1 clove) to the mango, and salt and pepper the salmon. The salmon was great, the mango sauce/topping was great. I am not so sure of the cheese. My husband called it "interesting" and "different." I may try again in the future when I have Brie. I thought it was tasty- I gave it a four and he gave it a 2/3. I also used flash frozen salmon and frozen mango. Enjoy!

Excellent! Very authentic flavors, I would only blend about half the soup. Becareful with the tumeric it can stain the your counter tops!

Beef Tamales

A cultural note for everyone who says the tamale recipes take too long. Traditionally a family will have a "tamalada"- a get together where family will work together assembling the tamales. Making tamales is a time consuming process but when you do it this way, you will have an opportunity to visit with family and develop family bonds. (It is great with friends too...)
