Pumpkin Spice Cupcakes

These were amazing! I made the cakes just as the recipe stated with the only change being baked at 375 for 10 minutes, then I read that this might make the cakes dry, so I put the heat down to 350 for 10 minutes and they came out perfect! Not like a muffin...perfect cupcakeyness. (Maybe adding extra pumpkin like many people did here might make it more dense, but as is it is light and fluffy). I doubled the cinnamon in the frosting and it was so yummy. But I wish the icing was more like a pipable frosting. I will try to make it more like a buttercream by adding more sugar, but the taste is so good.

Chocolate Chocolate Chip Cookies I

These should be called...are you kidding me? cookies! They are incredible...chocolatey goodness. I had no trouble keeping them moist for the 3 days they lasted in the house. They were a little thin and required 12-14 minutes. I am making these again and trying to freeze the dough for 10 minutes so they may be thicker. I am also going to add dried cherries in some of them...can't wait!

Fettuccine with Sweet Pepper-Cayenne Sauce

Really yummy! This is a surprising pasta that is rich in flavor and seems like it took all day to make. I added oregano and basil and some chicken. I also did the 1/2 tsp cayenne and it was just right. I added a little corn starch and warm water to thicken the sauce and it turned out just right for me. My husband would probably like it just as the recipe says because he likes his pasta with wet sauce. I will be making this again!

Great Mac and Cheese

Super yummy, I have made this many times, I like the thickness of it. It is even better when adding multiple cheeses. I added parmesan, swiss, cheddar, and colby and it was a hit!

Cream of Pumpkin Curry Soup

This was soo good. I did add some nutmeg, and I might add some more red pepper next time ( I like things a little more spicy), but overall this was one of the best soups I have made. Perfect for fall and winter. I served it with a nice rustic bread...mmm good!
