Acorn Squash Slices

Even slices is the secret to assure uniform doneness. I could only get small squashes, medium would have worked better. A hit at my dinner party.

A definite hit. A wonderful lite end to any meal. I don't like raisins, so was leery of the red currants. They were fantastic in this dessert.

I drained it before serving, also. One guest raved about it, and the rest were complimentary. I cut back on the red onion because the one I bought was very strong.

Stuffed Flank Steak

Quite good. I would recommend cooking string to tie the roll together. I used toothpicks and about 3/4 of the way through the cooking time the stuffing expanded and the whole roll opened up. Still tasted fine, but wasn't as pretty to serve as I had hoped.

Roast Sticky Chicken-Rotisserie Style

I made this in my convection oven. Reduced the temperature to 225 F. and it took the full 5 hours. The meat was tender, juicy and falling off the bone. Flavor was exellent.

California Grilled Veggie Sandwich

Made this sandwich for a July 4 picnic and it was great. I added portabello mushrooms, grilled for the same time as the zucchini. Also, I used Italian dressing as a brushed-on marinade instead of the olive oil.
