Chicken Chipulos

This recipe is the foundation of one of our favorites that has pretty much replaced enchiladas in our house. The only changes-corn tortillas, 1/2-3/4 can/jar of salsa verde in place of 1/2 the cream of mushroom soup. Awesome!!

Lasagne Verdi al Forno

This was excellent and it was rewarding to spend the day in the kitchen and end up with such a melt in your mouth recipe. Served it w/our favorite wine,green salad w/bayshrimp and Danish Bleu. I hope I don't offend, by changing the authenticity to suit our tastes, but I added minced garlic to the ragu, omitted the bacon and chicken livers. I hand added fresh grated romano and a little fresh parmesean to the bechamel. Rich and divine. Thank you!

Colonial Pumpkin Bars

These were bland even though I increased the cinnamon by almost double. The texture was fair, I pulled them from the oven 4-5 minutes early to keep them moist. I think an oil recipe would have allowed the pumpkin flavor to come through better. After tasting, I topped the frosting w/crushed skor and a butterscoth swirl to try and salvage them. This made them beautiful, and tasty in my kids opinion, but they were not salvagable.

Rib Eye Steaks with a Soy and Ginger Marinade

Italian Gravy

Truely italian. Similar to my 85 yr old grandfathers.I prefer a dark red wine, and I well-browned the meat prior to simmering. A delicious recipe.

Cranberry Grape Salad

I gave this a pre holiday test run. It was a fine salad but too bland for my personal taste. Approx. 3 TB powdered sugar could be pre mixed with the cream cheese for improvement.

Chicken Valdostano

All thumbs up from my family of 5. Finally tried it after looking at it several times. Changes- afraid of dry wine and white pepper for kids. I used Pinot Grigio and very fine-almost powder grind black pepper. My chicken stock was made with roasted garlic.

I was looking for a texture improvement to my "butter" recipe. I don't usally like crisco only recipes, so the compromise intrigued me. I tried it exactly as published and the cookies were chewy with crispy edges- just as the author stated and exactly what I was looking for. It's a keeper.

Libby's® Pumpkin Roll with Cream Cheese Filling

Don't fear this recipe. It really is easy and fabulous! I've made it several times, and I have learned that wilton parchment paper with wilton cake release to "prepare" the paper is MUCH better than waxed paper. The paper will come off with absolutely no effort- it just can't stick. I have only had the cake crack once- and it was because I forgot to set the timer and I overbaked it by a couple minutes-so watch the time. It doesn't look like a sheet cake when it is done. It is very shiny and spongy. I agree that there is not enough spice. I sprinkle pumpkin pie spice on top of the filling before rolling it up and I add about 1 teaspoon extra cinnamon to the batter (eye measurement).

Pizza Crust Fantastico

I can only give this 2 stars because as written it simply is not dough. It was way too wet. It's got great ingredients and on paper it was a stand out from the rest. Due to how sticky it was, I threw it out and started over making modifications. Modified, if interested, I used about 1 cup of water, 1/4 cup tomato sauce, 1/2 cup corn flour and 2 cloves roasted garlic, only 1/2 tsp italian seasoning blend b/c I was making it into mexican pizza....hardly the original recipe. I rolled it thin and heated my stone to 500 instead of 450...we don't like crust too chewy.

Tiramisu Cheesecake

I tired several cheesecake recipes in the past- with gelatin- with sour cream, etc. This one is far and above the rest. I really only need 1 cheesecake recipe and this is the keeper. As directed it's fabulous. Changes I have added for fun include- melting a small handful of chocolate chips in about 2 tsp strong coffee and marble it in the top prior to cooking. Looks lovely. This last time I did not have enough lady fingers so I also crushed some chocolate wafer cookies and graham crackers in addition to the 1-3oz package of lady fingers I had. I now cut the Kahlua in the crust by 1 TB and replace it with 1 TB strong coffee. (instant granuales in a tablespoon of water- approx 1 tsp) I don't measure exact since I've made this several times and have learned the consistency. Finally, and most importantly I have never had a cheesecake crack since baking in a water bath. Wrap your springfoam pan in foil (sides only) and place in a casserole dish with an inch or so of boiling water- or easier yet, preheat the casserole dish and water in the oven and place foil wrapped (sides only) springfoam directly into water bath.

Vegetarian Tortilla Soup

1st try as written 2-3 stars due to lack of heat intensity and overpowering green chile flavor. I like mexican food to wow my mouth with layers of flavor and some heat. For attempt #2, I used rotel tomatoes, only 1 can green chiles, 1/2 tbsp chicken base, fire roasted corn with black beans frozen mixture, small can tomato sauce, 1/2 tsp Penzeys Southwestern Spice. Topped with dolop of sour cream, chopped cilantro, few dashes Cholula. Cheese, avocado and chips as written, but cheese was a mix of pepperjack and colby. Not truly vegetarian with chicken base, sour cream and dairy cheese though. All in all, as written, this is a great base recipe.

Very much like chinese chicken salad from the deli counter. I used little more than half the dressing. Will definately make again with addition of soy sauce and a touch of sesame oil.

King Crab Appetizers

These were creamy, yet light and delicious. I'd call it California style due to lack of Old Bay Seasoning. (which I very much prefer) I was very pleased with the as written version, but I will add a clove of crushed garlic to the cream cheese next time. Great appetizer paired with white wine. I used lump king crab (fresh).

Cheesy Buffalo Chicken Dip

Gotta give it 5 stars. Nice spice, texture, flavor. Everyone loved it at our Daytona 500 party. I printed out take home recipes for requests. As for me, it's still 2nd to creamy garilic artichoke dip. I will make it again just as written for parties.

Sweet Corn Tomalito

There's no way to criticize this one. I tried it to satisfy our love of the too small of a dolop at Chevy's. I've made it for our annual camping potlucks, at the neighbors mexican fiesta, for our own gatherings and I have never not had "oh my gosh that's good", and overheard "did you get some of that" compliments. People are starting to look for it if the theme is mexican and my double batch is gone FAST. I know I "better" bring it lol.

French Baguettes

Why not be the 565th person to say yes, this is definately great! I made this on Monday, again on Wed and now 2 loaves are in the oven again for Friday night dinner with the neighbors. I followed the recipe to a tee on Mon. Then upped the yeast to 2 tsp. on Wed and sprinkled the top with kosher salt and pepper-skipping egg wash. Did it the same today. Just perfect!
