Chocolate Chip Muffins I

I made this recipe twice in the last few days. I love how quick and simple it is, making it an easy recipe to make for a quick grab and go "treat like" breakfast or something easy but delicious to share with co-workers. The first time I made this with butter as the recipe calls for and the second time with veggie oil. I have yet to taste the finished muffin but like the texture and smell better with the oil.

Easy Garlic Broiled Chicken

LOVE this recipe and so does the rest of the family. It has been added to the list of rotational favorites (which is pretty big, so I make it about once a month). I did take the suggestion of one of the other reviewers though and I BAKE @ 375 for about 45 minutes. I don't bother broiling it and it seems to come out just fine. I also almost always use boneless skinless chicken thighs which I have found come out best when they have plenty of room in the baking dish and aren't crowded.

Hearty Chicken and Rice Soup

I've made a resolution to stop wasting so much food this year. We had chicken and rice for dinner so a quick search led me to this recipe to use the leftovers in. The soup looks and smells great and was so quick and easy to make being the chicken was pre-cooked. Some quick packaging in mason jars will make for tasty grab and go work lunches this week. Thanks for a great recipe!
