Kona Chicken

This was very very good! I did it in a caserolle dish for two hours at 300 F and it was delicious. I'll be using the slow cooker method next time and I'm sure that'll be great.

Baking Powder Biscuits I

This was fast, easy, and excellent! I added some cheese and garlic powder, and I have lots of other things I'm going to try in them too. Next time I would use the spoon to gently give them a more biscuity shape, but no biggie.

Banana Chocolate Chip Cake

This was good...although mine turned out more like a 'square' than a cake in terms of how thin and flat it was. I went out and bought new baking powder in case that was the problem, or maybe this is how it is supposed to look. Easy, quick, and good though!

Kelsey's Favorite Stuffed Green Peppers

We really enjoyed these. I put some water in the pan before I baked them and that worked out well. I'll be serving this to guests soon and I'll open another can of sauce (I used italian flavoured sauce) and heat it up to drizzle over the top before serving, and maybe sprinkle it with parmesan and parsley. That should look and taste excellent! Great recipe to springboard from.

Vegetable Feta Rice

We really really enjoyed this. The heat from the rice brings out the flavours of the feta(I used garlic-herb flavoured feta) very nicely and the crunch from the veggies is a nice surprise. I diced my veggies fairly small, and I only used half an onion. I agree that a whole cup would have been too overpowering. This was great cold the next day for lunch with some cold leftover chicken chopped into it. It's always great when you try something and it turns out to be better than you were expecting! :-)

Italian Biscotti

I was so impressed at how these turned out. They looked exactly like biscotti that you get in fancy coffee shops, and since I had never made them before, I was really pleased. This makes a big batch - 2 friends and I had a bake-fest before Christmas and we all got quite a good share out of it. I'll do this one again for sure.

White Chocolate and Cranberry Cookies

These were a nice change from regular chocolate chip cookies. If you substitute 1/4 cup cocoa powder for 1/4 cup of the flour, you end up with a dark chocolate cookie with the red and white of the berries and chocolate showing. Really yummy!

Apricot-Coconut Squares

Really great, and a nice change from the usual chocolatey stuff I always end up making at Christmastime. I'll be doing these again! I used chopped up raw almonds, and I left them fairly chunky, and we loved it.

No-Peek Beef Stew

This was sooooo good....it smells really fantastic when you come home at the end of the work day and walk in the door. I made it one day when we were both off, and I think we sat around the crock pot waiting for it to be done! :-) It's a standby now, and it gives me a base that I can expand on if I want to change it too, and I like that.

Fruit Cobbler

I also made this with plums, and it was so good. I was a little skeptical about pouring the batter over the melted butter and being told NOT to mix it, but it all works out when it bakes. Really good basic recipe that I am looking forward to playing around with other fruits.

Bermuda Spinach Salad

I loved this salad..it has many of my favourite tastes, spinach, bacon, eggs. My bf didn't much care for it..but I think it's just not his sort of flavour blend, and not because the salad wasn't good. I liked the dressing as well, but cut the sugar down a bit.

Cocktail Meatballs

Crispy Coconut Chicken Fingers

Loved this! I used jalapeno jelly and dijon mustard because that's what I had in the fridge and it was a terrific combination. I also broiled them for a few minutes, and that gave them a nice colour and a nice crunch. We just finished eating, and I'm wanting to do this again tomorrow..heh heh...

Easy Seven Layer Vegetable Salad

Really yummy! Do your family a favor and plan to have a bacon'n'eggs breakfast the morning you cook your bacon for this. I got shot some dirty looks when I announced the bacon was for the salad and not for our breakfast...yikes!!! :-) I made this for an appetizer party, and it fed 8 people with a bit left over.

Slow Cooker Beef Barley Soup

We really enjoyed this soup on a cold rainy day in winter...but....slow cooked beef combined with the barley did something ....um..cleansing to our systems! So I caution anyone with digestive problems to be aware of this. It was very delicious, that's for sure, but it's become a bit of a comedy thing around here when I threaten to make the crock pot beef barley soup! :-) Perhaps next time I'll make it without the beef, and add cold roast beef at the end of the cooking...that should be ok.

Beef Florentine

This was good...a quick lasagne meal. I accidentally bought Italian stewed tomatoes when I thought I was buying Italian tomato sauce, but we both enjoyed this. I noticed that it didn't say what to do with the garlic, so I chopped it up and put it in with the hamburger. I also shredded a big carrot, and a small zuchini and some celery and saute'd that with the meat. I'll make this again for sure!
