Chicken and Bacon Shish Kabobs

This went over really well when we had friends over for a BBQ. One thing I would change is that I would just use regular bacon instead of the thick cut. I ran out of thick cut and used a few strips of regular and found them a lot easier to wrap with, and they cooked better. Other than that small change, I will definitely do this again!

Slow Cooker Beef Barley Soup

We really enjoyed this soup on a cold rainy day in winter...but....slow cooked beef combined with the barley did something ....um..cleansing to our systems! So I caution anyone with digestive problems to be aware of this. It was very delicious, that's for sure, but it's become a bit of a comedy thing around here when I threaten to make the crock pot beef barley soup! :-) Perhaps next time I'll make it without the beef, and add cold roast beef at the end of the cooking...that should be ok.

Kona Chicken

This was very very good! I did it in a caserolle dish for two hours at 300 F and it was delicious. I'll be using the slow cooker method next time and I'm sure that'll be great.

Artichoke and Black Olive Baked Chicken

I love this! I have a huge round baking dish that's quite unusual and I like to make this in that and put it in the center of the table when it's done. Guests find it pretty impressive looking, and very delicious. I adapt it to a smaller dish when it's just the two of us. I also love the suggestions people have, like sprinkling it with feta..or substituting rosemary or oregano. I don't understand when people say they didn't like something when it's so easy to alter recipes to suit your own taste! Use your imagination and have fun, is what I say.

Brown Sugar Chops

Not bad at all, but I didn't have time to read all the reviews first though. If I had, I would have marinated the chops for a while as a lot of people recommended. I baked mine in a foil-lined baking dish, so cleanup was easy. I ended up with a fair amount of liquid in the dish (some of it fat, of course) but I didn't really see it as 'sauce' like people have described, so we didn't use it.

Almond Chicken Salad

This is the dressing recipe I've been searching forever for! I also cut the mustard (heh heh) in half, but will add a touch more next time, just to see how that goes. I served mine over ramen noodles, and added thinly sliced nappa/chinese cabbage to it. I doubled the dressing recipe, drizzled it over the noodles, then the salad..layered them in single serving bowls, then kept the rest of the dressing on the side. This is a really terrific salad on a hot day!

Baked Dijon Salmon

I didn't have pecans or parsley, so I just salt&peppered some bread crumbs and sprinkled them over the top. We really enjoyed it! We've done the white wine poach thing to death and were happy to have the change to something different. Someone in these reviews talked about how some people don't follow the recipe, substitute ingredients, and then give the recipe a bad review....I can't stand it when people do that! Give the recipe a fair try at least, and have the brains to realize that it might not be to your taste and that it probably isn't a bad recipe at all....especially when you see that lots of other people like it.

One Minute Chocolate Icing

After I beat this icing for 3 minutes, I noticed it was thickening a lot as it cooled..it even slowed my electric mixer down. As soon as it hit the cake it hardened like a rock, and was completely unspreadable. I tried broiling it to warm it to spreading consistency, and of course it burned and I had to scrape every bit of it off. I ended up heating some blueberry jam (the only thing I could find, as I had used the last of my sugar up in this icing) and spread that on top of my scarred cake as a glaze. Perhaps if more milk was added next time? Not sure I want to risk the loss of another cup of sugar.

Vegetable Feta Rice

We really really enjoyed this. The heat from the rice brings out the flavours of the feta(I used garlic-herb flavoured feta) very nicely and the crunch from the veggies is a nice surprise. I diced my veggies fairly small, and I only used half an onion. I agree that a whole cup would have been too overpowering. This was great cold the next day for lunch with some cold leftover chicken chopped into it. It's always great when you try something and it turns out to be better than you were expecting! :-)

Apricot-Coconut Squares

Really great, and a nice change from the usual chocolatey stuff I always end up making at Christmastime. I'll be doing these again! I used chopped up raw almonds, and I left them fairly chunky, and we loved it.

Melt-in-your Mouth Shortbread Cookies

I made a boo-boo and refrigerated the dough overnight! The rolls wouldn't cut nicely, they just crumbled, so I ended up rolling it into little balls and baking it like that, instead of flattening it out and cutting. Worked just fine!

Greek Pasta Salad with Roasted Vegetables and Feta

REALLY enjoyed this! I used spinach instead of arugula (because I couldn't find arugula!) and we totally enjoyed it. I doubled the dressing and kept half of it on the side. This is the first recipe involving eggplant that I've ever liked, and I've made it a few times now for ourselves, and I look forward to sharing it with friends.

White Chocolate and Cranberry Cookies

These were a nice change from regular chocolate chip cookies. If you substitute 1/4 cup cocoa powder for 1/4 cup of the flour, you end up with a dark chocolate cookie with the red and white of the berries and chocolate showing. Really yummy!

Italian Biscotti

I was so impressed at how these turned out. They looked exactly like biscotti that you get in fancy coffee shops, and since I had never made them before, I was really pleased. This makes a big batch - 2 friends and I had a bake-fest before Christmas and we all got quite a good share out of it. I'll do this one again for sure.

Easy Seven Layer Vegetable Salad

Really yummy! Do your family a favor and plan to have a bacon'n'eggs breakfast the morning you cook your bacon for this. I got shot some dirty looks when I announced the bacon was for the salad and not for our breakfast...yikes!!! :-) I made this for an appetizer party, and it fed 8 people with a bit left over.

Stuffed Zucchini

We really enjoyed this! It was fun and easy to make. I'll be embellishing it a bit when I make it next though(adding some garlic, oregano, maybe some shredded carrots); I used hot italian sausage, and wasn't sure how spicy it was going to be so the only extra thing I added to this was parmesan sprinkled on top when it was done. I'll be using that tomato sauce mixture for other things, so that was great to learn as well.

No-Peek Beef Stew

This was sooooo good....it smells really fantastic when you come home at the end of the work day and walk in the door. I made it one day when we were both off, and I think we sat around the crock pot waiting for it to be done! :-) It's a standby now, and it gives me a base that I can expand on if I want to change it too, and I like that.
