Chicken and Bacon Shish Kabobs

Reviewed: Aug. 22, 2002
This went over really well when we had friends over for a BBQ. One thing I would change is that I would just use regular bacon instead of the thick cut. I ran out of thick cut and used a few strips of regular and found them a lot easier to wrap with, and they cooked better. Other than that small change, I will definitely do this again!

Baked Dijon Salmon

Reviewed: Aug. 22, 2002
I didn't have pecans or parsley, so I just salt&peppered some bread crumbs and sprinkled them over the top. We really enjoyed it! We've done the white wine poach thing to death and were happy to have the change to something different. Someone in these reviews talked about how some people don't follow the recipe, substitute ingredients, and then give the recipe a bad review....I can't stand it when people do that! Give the recipe a fair try at least, and have the brains to realize that it might not be to your taste and that it probably isn't a bad recipe at all....especially when you see that lots of other people like it.

No-Peek Beef Stew

Reviewed: Jun. 28, 2002
This was sooooo good....it smells really fantastic when you come home at the end of the work day and walk in the door. I made it one day when we were both off, and I think we sat around the crock pot waiting for it to be done! :-) It's a standby now, and it gives me a base that I can expand on if I want to change it too, and I like that.

Slow Cooker Beef Barley Soup

Reviewed: Jun. 28, 2002
We really enjoyed this soup on a cold rainy day in winter...but....slow cooked beef combined with the barley did something ....um..cleansing to our systems! So I caution anyone with digestive problems to be aware of this. It was very delicious, that's for sure, but it's become a bit of a comedy thing around here when I threaten to make the crock pot beef barley soup! :-) Perhaps next time I'll make it without the beef, and add cold roast beef at the end of the cooking...that should be ok.

Artichoke and Black Olive Baked Chicken

Reviewed: Jun. 28, 2002
I love this! I have a huge round baking dish that's quite unusual and I like to make this in that and put it in the center of the table when it's done. Guests find it pretty impressive looking, and very delicious. I adapt it to a smaller dish when it's just the two of us. I also love the suggestions people have, like sprinkling it with feta..or substituting rosemary or oregano. I don't understand when people say they didn't like something when it's so easy to alter recipes to suit your own taste! Use your imagination and have fun, is what I say.

Fruit Cobbler

Reviewed: Oct. 24, 2001
I also made this with plums, and it was so good. I was a little skeptical about pouring the batter over the melted butter and being told NOT to mix it, but it all works out when it bakes. Really good basic recipe that I am looking forward to playing around with other fruits.

Bermuda Spinach Salad

Reviewed: Apr. 15, 2001
I loved this salad..it has many of my favourite tastes, spinach, bacon, eggs. My bf didn't much care for it..but I think it's just not his sort of flavour blend, and not because the salad wasn't good. I liked the dressing as well, but cut the sugar down a bit.

This was very helpful to me - a good basic recipe that I can enjoy experimenting with.

One Minute Chocolate Icing

Reviewed: Feb. 16, 2001
After I beat this icing for 3 minutes, I noticed it was thickening a lot as it cooled..it even slowed my electric mixer down. As soon as it hit the cake it hardened like a rock, and was completely unspreadable. I tried broiling it to warm it to spreading consistency, and of course it burned and I had to scrape every bit of it off. I ended up heating some blueberry jam (the only thing I could find, as I had used the last of my sugar up in this icing) and spread that on top of my scarred cake as a glaze. Perhaps if more milk was added next time? Not sure I want to risk the loss of another cup of sugar.

Mediterranean Lemon Chicken

Reviewed: Feb. 9, 2001
I loved this..it was very very yummy. Next time I would double the lemon juice and olive oil, as I had to add more during the roasting time, and I think I'll let it marinate for a little while too. Easy, simple, delicious.

Cocktail Meatballs

Very easy...very tasty. I made mine ahead, froze them, let them defrost, then threw them in the crockpot on high for a few hours before our party, and they were great!

Chinese Firecrackers

Reviewed: Nov. 14, 2000
These were delicious! There was *just* enough chili paste in it to give it a nice zing. I did have a heck of a time figuring out how to make it into a 'firecracker' shape, so I ended up making little 'eggrolls' out of them, and they were easier to handle. I figure I might make the filling again and serve it over rice as a main dish.

Easy Seven Layer Vegetable Salad

Reviewed: Nov. 14, 2000
Really yummy! Do your family a favor and plan to have a bacon'n'eggs breakfast the morning you cook your bacon for this. I got shot some dirty looks when I announced the bacon was for the salad and not for our breakfast...yikes!!! :-) I made this for an appetizer party, and it fed 8 people with a bit left over.

Garlic Ginger Chops

Reviewed: Oct. 14, 2000
Hi! This is Carol...the person who submitted this recipe. I've read over the reviews, and the one that keeps on popping up again and again is that it's too salty. I use Kikkoman soy sauce, and haven't found it to be too salty myself... so I'm maybe thinking different brands are saltier than others.

Lemon Mustard Chicken

Reviewed: Jul. 8, 2000
Loved it! The only change I would make next time would be to leave the chicken in the mustard/lemon/lime mix for about an hour or so to really get the citrus flavor into it. It was delicious!
