Ultimate Chocolate Dessert

Oh, this one's sinful. I made this on a large scale for a dessert bar I had for my son's graduation party. Out of the 7 desserts I made, this was the one people went gaga over. It's so simple. It's very rich. the serving size is spot on. Any larger and you wouldn't be able to finish it. It's funny 2 different people at my party described it as "See's candy truffle in a dish." This was said at two different times by two different people. This is a very rich, thick grown up pudding. Even my husband likes it, and he's not a real pudding person. Thanks so much Chef John. Ya got a winner here!

Shrimp Kabobs

I also used non fat italian dressing. I also went back and fourth with shrimp and scallops. YUM! This is a very healthy recipe, and I will make again. I did my tomatoes on a separte rod. They do get mushy. Be very careful not to over cook, as nothing is worse than dry rubbery shrimp and scallops. Everything cooks just a bit faster when you marinate. Thanks for this.

Marshmallow Treats

Just like when I was a kids. Perfect. Add some chocolate chips, M&Ms, nuts, rasins, 1/2 c. peanut butter, Coco krispies, very versatile and this one does it all. Thanks.

Easy Garlic Broiled Chicken

My family really liked this. I used 18 bone in, skin on chicken thighs and used everything for just one recipe. (1/2 c. butter, 3 T. minced garlic, 3 T. Light Soy sauce, etc.) I did use more pepper because we like pepper, and I threw in about 2 T. Worchestershire sauce. (only because I like it so much and I was making so many thighs.) I baked it first at 350 or about 40 min. then broiled it for about 6 min. The meat was moist, and they really liked the crunch from the broiling. Now that I've tried it, the only thing I would do different is to maybe add some red pepper flakes, just to kick it up a notch. Using so many thighs, I think, saved it from being gressy as so many other posters complained about. My husband said to definately put this in the rotation, so this one's a winner in my book and I'm a happy camper. Thanks for the recipe.

Chicken with Chipotle

Loved it, in fact the whole family ate it right up. My husband thought it was great. I used whole chicken leg quarters, baked them as directed, except I put foil over the jelly roll pan, then up the chicken using baking racks so it would stay out of the greese that seeped out of the chicken. Made the sauce as directed too. This was a fast and easy meal. After reading other reviews, I may try it in chicken tacos. That sounds really good too. Thanks for the great recipe.

Sara's Beef Jerky

This was very good. My kids love jerky and have me make it every year for vacation. I made just a couple of adjustments. I used a dehydrator and I added some tobassco sauce just to give it a bit of a kick. I shook in about 5 squirts but should have used more. I can eat it and I'm a sissy girl. My kids love it hot & spicy, and really enjoy the flavor, but wanted more kick. I'll try again. Anyway, thanks Sara. Good job.

Mango Salsa

This was wonderful. I 4 xed this recipe as I can't imagine 1 mango for 8 people for really work. Others at the party asked for the recipe. I didn't add the red bell pepper, simply becuase I forgot to buy it. I also only used 2 jalapenos because I'm a sissy, but I know others would have liked it. Like I said, this was great and I will make it again and again. I consider this a great Diet food that everyone will like. Thanks so much.

Zippy Summer Shrimp

I made just like it said except I used crushed garlic instead, as that's what I had. Great recipe. My family who enjoys spicy and thought it was great. I thought it was a bit spicy, but I'm a sissy. (For reference,Medium salsa is the best I can do and sometimes that's too hot) This recipe is so very diet friendy that that's why I made it. Served over brown rice with a nice salad. This is a keeper that I will come back to again and again. Thanks Rebecca!

Three Cheese Baked Ziti

This was very good, but as per other reviewers, you do need more sauce. I had some leftover spaghetti sauce (I made enough for 2 meals) and it worked perfectily. A quick and easy meal. Just serve it with some salad and garlic bread. YUM

I thought this was sort of bland, but my husband liked it. I don't know if I would make it again. Only if he asks for it. I hate giving less than glowing reports as I know how hard people work on their recipes to make them just right. This one just wasn't for me. Thanks anyway.

Garlicky Appetizer Shrimp Scampi

I made this and the whole family really liked it. I had to broil it as it was way too cold out to BBQ, and it turned out just fine. I made this for dinner instead of as an appetizer and served with rice and a veggie. I will make this again. Thanks.

Quick and Easy Green Chile Chicken Enchilada Casserole

Loved, loved, LOVED this dish. I did make some changes though. I was in a hurry, so I bought a roasted chicken from the store and had my kids shred it. I didn't char the tortillas either. Instead I just torn them up. Poured the sauce in the bottom of the pan, and since I saw that many reviewers thought this was a bit bland, decided to use some spicy/jalapeno refried beans. Here's what I did. 1. Sauce 2. torn up tortillas, 3. spread a can of beans, 4. chicken mixed with sour cream, 5. the cheese, then baked. This process went very fast. I think next time I will add some black olives, only becasue I love black olives. I did change this up, but you gave me the idea. Thanks so much for the post. I will do this again and again.

Chocolate Lovers' Favorite Cake

I made this for a New Year's Eve party. YUM! Turned out great. Actually, I made this twice for the party. I read the reviews and noted how others said to really, REALLY, grease up the pan so it turns out. Then in another review I read that you should put this upside down on a wine bottle (or some such) so the cake doesn't fall. Can you gues where I'm going with this? Yep, as I was trying to turn in over onto the wine bottle, the whole thing fell out, all over my counter. Oops. Made it again, and just let it sit in the pan until I turned it out on a cooling rack. I don't believe it fell at all. When I greased up the bunt pan, I sprinkled coco powder in the bottom. I didn't want any white from flour on my cake. I also read that it's better the next day, so I too made this a day ahead of time. LOL, Fortunately for my family, they had the first one to snack on. I used a Chocolate Ganache, then striped some White Cho. ganache over that. Then I did as the pictures, and added chocolate covered strawberries inside the hole and around the base of the cake. Looks so pretty and professional. Try this, you won't be sorry.

Pecan Breaded Chicken Breasts

My family really loved this, which is shocking as they don't usually like nuts in their food. I did make some simple adjustments, just to make it a little (and I mean little) bit more healthy. I used a teflon electric pan so I could cut down a little on the butter and oil and I used olive oil. I butterflied the chicken breasts so I could make sure they got done before I burnt the outside. (I still wasn't sure if they were done enough so I put them in the oven for about 15 min at 325) I also ground the pecans, and used lite pancake syrup. I just used a BBQ brush to just paint on the syrup then layed them in the nuts to bread. My family now is asking for these all the time. They did look a little burnt, but they weren't if the flavor is any indication. Rhonda, thanks for the great recipe. Your the best!

Jalapeno Popper Spread

I tried this because my family LOVES stuffed jalapenos. I wanted something that was easier but real close to those. This one is the next best thing. It will go into my keep file. I read the reviews and also used panko on the top. I also used freshly grated parmesan, and I baked it instead of using the micro. I also doubled the diced jalapenos as my guys really like the hot stuff. I can't eat it when I make it this hot, but when I use the orginal recipe, it's just right for me. I made this for our camping trip over Thanksgiving, and among the 10 other appetizers put out, this is the one that went first, and was gone in less than 10 minutes. I'm making this for a New Year's Eve party, and will make both kinds. I'm also going to try adding some bacon bits (real ones) and I think that will only add to how great this is. I'll update later and let you know how it went over. I highly recommend this recipe. You can't go wrong with it. Thanks Denise :)

Korean BBQ Chicken Marinade

Great recipe! Thanks so much. Our family is all on Weight Watchers, and after reading other reviews, I subed in Splenda instead of the sugar. Also, since I didn't have the chili paste, I used Red Pepper flakes. Faboulous! The chicken breasts were moist and very flavorful. You do need to turn them often on the Bar-B-Que so they don't burn. My husband has been using the leftovers on sandwiches. It's even good cold. Appreciate the recipe.

Buttermilk Pancakes II

I had some leftover buttermilk to use up and found this recipe. So glad I found it. These were great! I made the night before just to save time in the morning. The batter got a little thick, but all I had to do was stir it down a bit. The whole family really liked these, and I will make it again. Thanks.

Wilted Spinach Salad

This was very good. I made it as shown the first time. The second time, I changed it up a bit, and liked it even better. Instead of green onions, I used a red onion. (Vidalia onions were even better) I did not add the 2 eggs to the dressing. I just couldn't do it. I used red wine vinegar instead and used splenda instead of the sugar. My husband and family all really loved it. Served with some garlic bread, and boom, dinner was done. I'm thinking of serving this to the kids football team next week for thier pre game salad. (I'll probably use olive oil instead of the bacon greese for the dressing though)
