Mini Cheesecakes I

These tasted great! My problem was with how sticky they were out of the liner. I used these for a dessert bar at a party my family was having. After sitting out for a while, they were really nasty to pick up and hold. If you make these just make sure you are abe to keep them cold and you'll do fine.

Chicken Breasts Pierre

Fabulous! As per other reviews, I used diced tomatoes, and wine instead of water. I also doubled the sauce amount. Can't imagaine having enough of this relatively heathly reicped with out it. I have 5 kids, and everyone said how great this was. I served over rice, but know it would work well with spaghetti. Just to make it a tad healthier, I used Olive oil. After making this, I think the next time I will not dredge the chicken in flour. I made this in my electric skillet which is made with teflon so I even used less oil. This is a great recipe and where it is great the way it is, you can make your own little personnal adjustments and still get something great. Perfect with just a salad and the rice/pasta. Jalapeno Popper Spread

I tried this because my family LOVES stuffed jalapenos. I wanted something that was easier but real close to those. This one is the next best thing. It will go into my keep file. I read the reviews and also used panko on the top. I also used freshly grated parmesan, and I baked it instead of using the micro. I also doubled the diced jalapenos as my guys really like the hot stuff. I can't eat it when I make it this hot, but when I use the orginal recipe, it's just right for me. I made this for our camping trip over Thanksgiving, and among the 10 other appetizers put out, this is the one that went first, and was gone in less than 10 minutes. I'm making this for a New Year's Eve party, and will make both kinds. I'm also going to try adding some bacon bits (real ones) and I think that will only add to how great this is. I'll update later and let you know how it went over. I highly recommend this recipe. You can't go wrong with it. Thanks Denise :)

Sugar N Spice Popcorn

This was very good. Kettle corn with cinnamon. It wasn't hard to make. A little time consuming, but not bad. It's also so much cheaper to make than buy.

Sara's Beef Jerky

This was very good. My kids love jerky and have me make it every year for vacation. I made just a couple of adjustments. I used a dehydrator and I added some tobassco sauce just to give it a bit of a kick. I shook in about 5 squirts but should have used more. I can eat it and I'm a sissy girl. My kids love it hot & spicy, and really enjoy the flavor, but wanted more kick. I'll try again. Anyway, thanks Sara. Good job.

Quick and Easy Green Chile Chicken Enchilada Casserole

Loved, loved, LOVED this dish. I did make some changes though. I was in a hurry, so I bought a roasted chicken from the store and had my kids shred it. I didn't char the tortillas either. Instead I just torn them up. Poured the sauce in the bottom of the pan, and since I saw that many reviewers thought this was a bit bland, decided to use some spicy/jalapeno refried beans. Here's what I did. 1. Sauce 2. torn up tortillas, 3. spread a can of beans, 4. chicken mixed with sour cream, 5. the cheese, then baked. This process went very fast. I think next time I will add some black olives, only becasue I love black olives. I did change this up, but you gave me the idea. Thanks so much for the post. I will do this again and again.

Savory Crab Stuffed Mushrooms

I made these for a New Year's Eve party. YUMMMMMMM! After reading some of the other reviews, I did make a couple of changes. I added about 1/3 of a 8 oz. brick of cream cheese, added a healthy dash of Worchestershire sauce, a bit of cayenne pepper. I also dipped the mushrooms in the melted butter. I filled 44 mushrooms with this recipe. They were great. Next time I will also had garlic. I did miss it here and can't believe I didn't add any. I always add garlic. I will also use red pepper flakes, instead of cayenne. I also made these the night before as others have stated. I think it would be great made with sausage too. My husband said they were the best! Thanks La Vaun for this recipe. You did good! :)

Restaurant-Style Prime Rib Roast

Great way to make Prime Rib. I cooked it just like Barbara said too, but based on other reviewers I cut the time down to 15 min a pound. Not quite long enough. I wanted Med/Rare, and got rare. Next time I will go for 17/18 min. a pound. I also didn't let it sit long enough with the foil cover, but that was my son's fault. He had to leave so I had to move up the standing time. Again, all my own fault. It was the juiciest Rib Roast ever. Thanks for all the years coming up with this Barbara. It's now my go to recipe.

Green Bean and Mushroom Medley

This was great!! I have 5 kids and everyone thought it was really good. I cut back a little on the butter, just to save calories and fat. No one picked out anything, but then my family is usually pretty good with their veggies. It does have many steps, but absolutly worth each and every one. I agree with a previous reviewer in that I doubt I would make this at the same time I was cooking a hugh meal, but possibly if I had the time before hand and got it all prepped I would. It's that impressive. Thanks for a great recipe. UPDATE: I forgot to add that I cut down on the salt. I agree with other reviewers that it just doesn't need that much salt. I'm making this for Thanksgiving this year. I'm going to make it the day before, and then just warm it the next day. I might try to add some toasted slivered almonds too. Someone else tried that and liked it. It sounds good to me. Yummmm

Korean BBQ Chicken Marinade

Great recipe! Thanks so much. Our family is all on Weight Watchers, and after reading other reviews, I subed in Splenda instead of the sugar. Also, since I didn't have the chili paste, I used Red Pepper flakes. Faboulous! The chicken breasts were moist and very flavorful. You do need to turn them often on the Bar-B-Que so they don't burn. My husband has been using the leftovers on sandwiches. It's even good cold. Appreciate the recipe.

Best Easy Chicken Croquettes

I'm sorry, but this was awful. I followed the recipe except I used green onions instead of regular. The Croquettes were very, very dry. I'm so disappointed. I was looking for another recipe to use up leftover chicken. This wasn't it. My family and I all took one bite, and instantly disliked these. Sorry.

Chocolate Lovers' Favorite Cake

I made this for a New Year's Eve party. YUM! Turned out great. Actually, I made this twice for the party. I read the reviews and noted how others said to really, REALLY, grease up the pan so it turns out. Then in another review I read that you should put this upside down on a wine bottle (or some such) so the cake doesn't fall. Can you gues where I'm going with this? Yep, as I was trying to turn in over onto the wine bottle, the whole thing fell out, all over my counter. Oops. Made it again, and just let it sit in the pan until I turned it out on a cooling rack. I don't believe it fell at all. When I greased up the bunt pan, I sprinkled coco powder in the bottom. I didn't want any white from flour on my cake. I also read that it's better the next day, so I too made this a day ahead of time. LOL, Fortunately for my family, they had the first one to snack on. I used a Chocolate Ganache, then striped some White Cho. ganache over that. Then I did as the pictures, and added chocolate covered strawberries inside the hole and around the base of the cake. Looks so pretty and professional. Try this, you won't be sorry.

Tiramisu Layer Cake

I got rave reviews on this. I did as others said, and made one white layer and 2 coffee layers. I made this for a New Year's Eve party, and everyone said it was really, really good. My brother in law who never eats cake had 2 pieces. The only thing negative were that 2 of my sisters in law said you could really taste the Kahula. I followed the recipe for the liquor amount exactly. I will make this again, only next time, cut back by about 1 or 1&1/2 T. of Kahula. I made this two days ahead of time like others said to do. I was worried that the Whip Cream frosting would dry up, but no worries. It was great. The only other difference I made was using an instant mocha mix instead of instant coffee. We don't drink instant, and I couldn't justify to myself spending $3-$4 for something just to throw it out. At Stater Bros I found a 1 serving pkg. of an Instant Mocha Latte for only .59 cents. I used it all in the two layers. Thanks so much for the great reciped Bettina!

It's Chili by George!!

This was pretty good Chili. I agreeded with the other reviewers that it had too much juice in it, so I cut that way back. I made this for a friend and her family. She's been sick, I've been helping out, and wanted something I know they liked. I got rave reviews from the whole family, and they wanted the recipe. Since it makes so much, we snuck a couple of bowls before I took it over, and my son and I thought it was really good too. You can't go wrong with this one. Good job George!!

French Silk Chocolate Pie I

Fabulous! For Thanksgiving, I cheated and bought the pies this year at a local well known Bakery/Resturant. One of the pies I bought was a French Silk Pie. Everyone loved it. A few days later was my son's birthday. He really like the pie, and asked for it for his birthday. I decided to try to make it. He and the rest of the family said this was even better. That doesn't happen very often where I beat out a bakery. I did as other said and doubled the recipe and I cut down on the sugar by about 1/3 cup. I also cheated and bought a graham cracker crust(10")and it fit perfectly. Since I doubled it, I had to mix (on High)a total of 20 min. (5 min per egg) You have to mix it like it says or it will be grainy. I sort of tried it after each egg, and by the fourth, no more "grainy" feel to it. This was as the name says, Pure Silk. Be warned everyone. This is a very intense pie, and a little goes a long way. Keep your portions smaller. Thanks so much for a great recipe.

Mary's Meatloaf

This had so many good reviews, I wanted to try this. Sorry, but this just did not do it for my family. It was moist. That's the best thing I can say for it. Not much taste, and the glaze on top was way too sweet. I thought my boys would like it, but even they said to loose the recipe. This is the first time I'm posting a negative review. I'll be going back to the Quaker Oats recipe. At least the family likes that one.
