Harvest Potato Casserole

Reviewed: Jul. 3, 2012
I've been making this dish for years. Imagine my surprise to find it here. I don't put bay leaves or pimento in it. Trust me, you'll love this casserole. It stays hot for a really long time. I boil my own potatoes then shred them. You can use frozen hash browns and if you do, I recommend you cook them in the microwave first for at least 10 min. or so. Everyone who has this asks for the recipe.

Spicy Scarborough Chicken Marinade

Reviewed: Jun. 1, 2012
This was okay. Not really spicy though. I'm a sissy when it comes to chilies and I didn't have a problem at all with this. I followed it to a T except that I doubled the recipe. Watch this on the grill. It burns faster than you'd think it would. Thanks Pam.

Grilled Tri-Tip with Oregon Herb Rub

Reviewed: Jun. 1, 2012
Great Rub! I didn't add the celery salt or the dill weed only because I don't care for those two things. Everything else was great though. Make sure you do this the day before. I've done it just an hour before, but it's best when you do it the day before. Try this, you won't be sorry. Thanks so much Chef!

Strawberry Cheesecake Bites

Reviewed: Jun. 1, 2012
These are fabulous. I made them for a dessert bar I had for my son's graduation. I also made some pot de creams (allrecipes.ultimatechocolatedessert) While the pot de cream took the #1 spot, these were close at #2. After dipping them in the chocolate, I drizzeled white chocolate over them. Looked beautiful and soooo many compliments. Most people don't know that strawberries are hollow once you get down under the stem. Lots of room for the cream cheese. Thanks so much for the great recipe idea. You helped make my dessert bar rock!

Ultimate Chocolate Dessert

Reviewed: Jun. 1, 2012
Oh, this one's sinful. I made this on a large scale for a dessert bar I had for my son's graduation party. Out of the 7 desserts I made, this was the one people went gaga over. It's so simple. It's very rich. the serving size is spot on. Any larger and you wouldn't be able to finish it. It's funny 2 different people at my party described it as "See's candy truffle in a dish." This was said at two different times by two different people. This is a very rich, thick grown up pudding. Even my husband likes it, and he's not a real pudding person. Thanks so much Chef John. Ya got a winner here!

Jalapeno Snacks

Reviewed: Dec. 2, 2011
Oh Boy are these good! Since it was so cold out, I baked these in the oven on some cooling racks inside of a jelly roll pan. That lets the greese drip down away from the snacks. My family begs for these all the time. Thanks for a great recipe.

Slow-Cooker Pepper Steak

Reviewed: Aug. 24, 2011
Oh, this was good! I didn't get the beef in time to put it in the slow cooker, so I did it on the stovetop. My family really, REALLY liked it. I added about a teaspoon or so of Red pepper flakes just to give it a bit of a kick. This is going into the rotation for sure.

T Bird's Beef Jerky

Reviewed: Jul. 11, 2011
I've been making this for a few years now. The first time I followed it to a T. I love worchestershire sauce, but it was overpowering in this recipe. I've since cut it back to 2/3 c. and use 1 1/4 c. Light Soy sauce. I follow everything else as written. Thanks Dewy.

Modenese Pork Chops

Reviewed: Jul. 8, 2011
I thought this was sort of bland, but my husband liked it. I don't know if I would make it again. Only if he asks for it. I hate giving less than glowing reports as I know how hard people work on their recipes to make them just right. This one just wasn't for me. Thanks anyway.

Chicken with Chipotle

Reviewed: Jul. 8, 2011
Loved it, in fact the whole family ate it right up. My husband thought it was great. I used whole chicken leg quarters, baked them as directed, except I put foil over the jelly roll pan, then up the chicken using baking racks so it would stay out of the greese that seeped out of the chicken. Made the sauce as directed too. This was a fast and easy meal. After reading other reviews, I may try it in chicken tacos. That sounds really good too. Thanks for the great recipe.

Buttermilk Pancakes II

Reviewed: Jul. 5, 2011
I had some leftover buttermilk to use up and found this recipe. So glad I found it. These were great! I made the night before just to save time in the morning. The batter got a little thick, but all I had to do was stir it down a bit. The whole family really liked these, and I will make it again. Thanks.

Cafe Mocha Mini Muffins

Reviewed: Jul. 5, 2011
These went over very well with the people I made these for. I don't make instant coffee so I found a one serving size of instant cafe mocha in a foil packett at the store. ( I think it was made by Swiss Miss) Anyway, I used that and they came out great. I will make this again and again. Thanks.
