This recipe is spot on! The one thing I did was after mixing the spices, I ran it through my grinder on the smallest grind twice. This mixes the spices in to the meat so perfectly and it gives the meat that same restaurant texture. The other thing is to shape it into loaves and wrap them tightly in plastic wrap for a couple hours (best over night) in the fridge before cooking.
