Grilled Salmon with Habanero-Lime Butter

FUNominal! We're used to hot. Agree with cutting down on the butter. Either that, or put in on your fresh grilled Jersey corn! Yum!

Low Sugar Oatmeal Raisin Cookie

Be careful measuring Splenda! It's lighter than sugar. Some may be misusing the Usage Guide on a box of bulk Splenda. It states 50 g SUGAR = 4 T Splenda. They then believe 50 g SPLENDA = 4 T; so 10 g (this recipe) = less than 1 T. WRONG! I've got to agree a full cup of Splenda is overkill - 1/2 c is plenty! A good, light cookie!

Apple Crisp II

Excellent & easy! Nix the water (not at all necessary). Doubled the topping. Allowed to sit in the oven (off) at the end. Thinking about putting even more of the topping in the processor & forming a bottom crust, too. Serve warm with vanilla ice cream!

Barbeque Pork Two Ways

BEYOND EXCELLENT! Used a loin & cut off the fat. Slow cooked the pork by itself, pulled it (less messy this way), THEN added sauce (as suggested by many: half ketchup, half BBQ sauce)& continued cooking. Loved by all: kids, grandparents, co-workers, etc. Not one bad word! Melts in your mouth! I had to make THREE 10 pounders because more was demanded by all (adjust recipe for the amount of meat you're cooking). Thank you, thank you, thank you! Mmmmmmmmmm!

Chicken Fried Chicken

Very good! Definitely needs to be spiced up. The nice thing is you can add spices of choice. I used garlic & onion powder, cajun, cayenne & paprika. Also used a little corn starch in place of the potato flakes. I opted to bake it (therefore probably not as crunchy) to make it healthier - but still excellent!

Sour Cream Apple Pie I

Excellent! If you're making one, might as well make two! It'll disappear! Agree with doubling the butter in the topping. Serve warm with vanilla ice cream! Will experiment with brown sugar & cinnamon, but agree this is 5 stars w/o any adjustments.

Very good! Had trouble locating cream liqueur, so used coconut rum. Assume when I find the cream liqueur it'll be 5 Stars! What about cream or Half & Half, or some such, instead of the milk?

Bacon and Date Appetizer

Fattening I'm sure - but oh so good! Takes time. Wonder about other stuffers -suggestions? Can eat hot, warm or cold. Reheats easily. Leaving in a warm oven allows bacon to become done throughout, and allows the 2nd batch to be ready for serving. Not your everyday appetizer treat. Will do again when adequate prep time allows. Nice for a change!

Addictive Sweet Potato Burritos

May sound funky, but just try it! It's great! I go heavy on the sweet potatoes. Feel free to substitute beans of choice. Makes plenty. I put monterey cheese in & on it. I like things hot, so I add hot sauce & cracked red pepper before I microwave them. Top with salsa, light sour cream & cilantro. Yum!

Artichoke Crab Dip

Loved by all! Easy to make. For presentation I hollowed out a loaf of Italian bread & served the dip in it; and used the "discarded" bread, as well as specialty crackers.

Spaghetti with White Clam Sauce

I used chopped clams, and DOUBLED the amount of clams. Used every bit of clam juice. Not at all too clammy! Made it early in the day & let it meld. Everyone loved it - even the non-clam eaters! It's already added to my recipe box!
