Corn Casserole II

I would consider this a dip rather than a casserole because it was a bit soupy. I served it with tortilla chips. This dish had quite a bit of heat to it with the jalepenos (and I used less than recommended!) I backed off on the butter per other reviews and it still was a bit much. The butter wasn't absorbed and stayed on top making the dish look a bit greasy. I did melt some cheddar cheese on top to give it more of a solid look. I served this dish at a potluck and people generally liked it, but I did end up with left-overs.

Delicious Ham and Potato Soup

This was excellent soup. I made it for a friend of mine who just had a baby and she devoured it. It was a lot of chopping because I doubled the recipe...but it was well worth it. I think this could be very good with a can of corn added to it. It tastes more like a chowder than a soup.

Glazed Meatloaf II

Wow. I'm not normally a fan of meatloaf but this was very good. I also loved that it was so easy to make. I made some slight alterations. After reading other reviews about how sweet the sauce was I decided to add about 2 pinches of garlic salt to it to offset the sweetness. I think that really helped. I also added one clove of minced garlic to the meat mix. Other than that I followed the recipe and it was wonderful. I will definitely make this again!

Slow Cooker Chicken Stew

This is a very easy and tasty recipe. I have made this 3 different times. It also freezes well so we've had it as left-overs. It's great for warming you on a cold day. The first time I made it, it was too salty. Now I omit salt when I make it. Really best if served over rice!

White Cheese Chicken Lasagna

I made this for a friend of mine after she had her baby and she loved it. She even froze it and ate it a week later and still loved it. It didn't all quite fit in one casserole dish so I made a smaller casserole of it with the remaining and kept it for myself. Very good stuff! I think this would be great for kids too.

Baked Dijon Salmon

This is a very simple yet flavorful recipe. I went a little light on the sauce because someone in their review said they overdid it and it ruined it for them. But, I think I should have just lathered it on because the sauce was good. This is a recipe that will impress guests too!

Company Chicken Pasta Salad with Grapes

Wow! What a great recipe! This is so easy to make. It's very light tasting and has a sweet and ethnic flavor as well. The combination of the curry and the grapes are a wonderful mix.
