Cinnamon Coffee Cake II

Reviewed: Mar. 3, 2012
I did 1/2 applesauce and 1/2 oil. the applesauce was natural- no sugar added, but this cake was still way too sweet. Even the kids that said they liked it only ate half their small slice. I thought twice, because I don't like cake mixes, but due to the high reviews I made it anyway. This also leaves a chemically after taste. I am going back to my old recipe, it's more time consuming, but worth it.

Basil Butter

Reviewed: Feb. 21, 2012
Very good! I also added 2 cloves of fresh garlic and omitted the garlic salt and seasoned pepper. I only had unsalted butter, so I added in a little kosher salt. I think it would be amazing with some Parmesan added in, I will try that next time.

Ham and Cheese Breakfast Quiche

Reviewed: Feb. 17, 2012
prepared in a 9x13 pan- used 2 packs of Simply Potatoes & increased eggs to 6 and fat free 1/2 and 1/2 to 1 1/4 cups. I seasoned the potatoes before baking. This was good, and an easy way to use up cooked ham. Everyone loved it.

Orzo with Kale

Reviewed: Oct. 24, 2011
This was delicious! Next time I would use a less orzo, maybe a cup, and more kale. I would also put lemon on the side for people to add their own. My kids thought it was too strong, even though I didn't use a whole lemon.

Salisbury Steak

Reviewed: Apr. 12, 2011
I gave it 4 stars only because I changed the gravy. This is the second time I have made it, and we really like it. The gravy is very forgiving if you use what you like best. I added a little bit of beefy onion soup mix (about 1/3 of a packet) to the called for ingredients and used 2 lbs of ground beef . For the gravy I used the rest of the french onion condensed soup, a can of golden mushroom, and a jar of beef gravy. I omited all salt because the ingredients are a salty enough by themselves. I also added a half can of water. I served with mashed potatoes. Thank you for the recipe!

Pleasant Pork Chops

Reviewed: Mar. 13, 2011
This was delicious! My family isn't crazy about onions, so I used a shallot instead and 2 large cloves of garlic. I also reduced the butter a bit. The sauce was excellent, and not salty at all. I added a pinch of savory too. I served it over noddles. Everyone enjoyed this, so I will be making it again. Thanks for the recipe!

Boilermaker Tailgate Chili

Reviewed: Mar. 1, 2011
This chili was very good. I omitted the bell peppers because we don't like them, I also used 3 cans of chili beans- with sauce and 1 can white kidney beans. I cooked the meat in a skillet, drained the meat, then added all the ingredients to the slow cooker and let it cook all day. The flavor was wonderful- and like most reviewers stated, it's even better the next day. Use good quality chili beans whose sauce has a flavor you like, since that does come through. This will be my new go-to red chili recipe.

Ricotta Bread

Reviewed: Feb. 19, 2011
I have used this recipe several times- it's a favorite of ours. I made into rolls using muffin tins this time, and they came out great. I don't have a bread machine, so I follow the first reviewer's suggestions, and it turns out great. I always double it, then it makes enough to save for breakfast too.

Buttermilk Pancakes II

Reviewed: Jan. 29, 2011
I followed the recipe exactly, and these pancakes were just not good. I usually make the "fluffy pancakes" recipe from this site, and those are 5 star every time. I had a large carton of buttermilk, so I thought I would give this recipe a try- but it was a disappointment. The fluffy pancakes recipe is much fluffier, less eggy, and a little sweeter. I won't make these again.

Chocolate Brittle Surprise

Reviewed: Dec. 24, 2010
I didn't really like this. It's very sweet and the crackers inside seem to have absorbed the butter and are greasy. It was easy to make, but I wouldn't do it again. I also think the caramel needed to cook more before pouring over the crackers, I usually do it on the stove and I think that method works a lot better than the microwave, even if it takes longer.

Maria's Rice

We liked the flavor of the rice, but there is way to much butter. I cut the butter in half and it was still too much. I will try it again with a Tbs and see if we like it.

Pesto Cheesy Chicken Rolls

Reviewed: Oct. 25, 2010
Yum! This cooked up so perfect, and had a really nice flavor. I thought the pound/roll up process was a lot easier than I expected, I had it all together in about 10 minutes. I used 2% mozzerella, and my cheese didn't ooze out, the cheese didn't get chewy or hard either. My son was all set to not like it, but he took a bite and loved it.

Pasta with Yogurt Sauce

Reviewed: Oct. 25, 2010
We loved this recipe. As another reviewer suggested, I cooked the garlic slightly in the butter before I tossed it with the cooked pasta, then I added the yogurt later. I also added a little bit of shredded asiago cheese.

Waffles I

this recipe got a big thumbs down in our house. I think all the wet ingredients need to be added before the dry, so that was part of the problem, but there was also no flavor, even though I added more sugar and vanilla.

Fluffy Pancakes

This is a wonderful and easy recipe. The kids like these pancakes much better than any box mix. I add a splash of vanilla to the wet ingredients. I also omit the butter- it still tastes great and fluffs nicely.

Ice Cream Pie Shell

Reviewed: Jul. 12, 2010
Everyone loved this ice cream pie. I was looking for a recipe my mom used to make when I was little and this is the closest I could find. I used rice krispies instead of the chocolate puffs, they are small enough that you can leave them whole and not crush them, they were the perfect flavor and consistency. Next time I would mix the peanut butter and corn syrup together first. That would make the peanut butter a lot easier to mix in with the cereal. I put it in a 9x13 pan and froze it before adding softened ice cream and freezing again for another hour.

Isaiah's Pretzel Fried Chicken

Reviewed: Jun. 18, 2010
I added more of some seasonings, plus some garlic powder and a little salt. I used milk instead of egg as my middle "dip". I also drizzled a small amount of butter over the top and baked it in the oven. It was delicious. I gave it 4 stars instead of 4 since I made some changes, but I will definitely make it again.

Cheesy Ranch Potato Bake

Reviewed: Apr. 14, 2010
Everyone loved this dish. I only gave it 4 stars because I modified it. I used 1 Tbs. butter that I melted and tossed with the potatoes before baking- it was plenty! I used mozzarella and sharp cheddar and only about 1/3 of the bottle of ranch. Just enough to make it moist, but I didn't want to overpower the dish. This dish is a keeper, and very easy.
