Turkey in a Smoker

We smoked a 28lb turkey for the company Thanksgiving party using this recipe last year. There were 5 other traditional turkeys at this party but ours was the only one completely gobbled up. One minor ajustment we made to the recipe was to add 1C apple cider vinegar to the brine reciped we found on this site. To complete the brining process we stuffed the turkey into a roasting bag (it was a tight squeeze)poured the brine into the bag and set the turkey in a rosting pan rotating the turkey every hr or so overnight. We chose to use applewood and cherry chips in our grill (we didn't have a smoker). Don't forget to smoke the turkey in a roasting pan and keep injecting the drippings back into the turkey.Yum.

Lumpia (Shanghai version)

I have been making lumpia for years now using all pork, all ground beef and even all ground turkey for the filling. The pork filled lumpia came in first for taste with the ground turkey coming in second. Check the lumpia wrappers for mold before you check out in the grocery store. Experience has taught me that the lumpia wrappers either need to be used almost immediately or frozen for future use as soon as you get them home. They mold easily and I have bought my fair share of unchecked moldy wrappers home. It is really important to only put about a pinkie's worth of filling in each wrapper as these cook up pretty quickly and you want to make sure these are done completely. Sometimes I cheat using store bought shredded carrot and cabbage cole slaw mixture and a half a medium onion for the vegetables. Oh and dont forget to pull all of the wrappers apart before you start rolling (a huge time saver). Just remember to cover them back up with a dry dishcloth as to prevent drying out while rolling. I always create an assembly line using about 7 wrappers at a time quickly stuffing, rolling then sealing them. Sweet Chilli Sauce is a must have for dipping. It can usually be found next to the sweet and sour sauce of any grocery store while the wrappers can be found in the frozen section. Both can be found at just about any international grocery store. Cook some lumpia now and freeze the rest for a later date.

BBQ Corn

Another 5 star creation. We used the cheapest beer we could find and the corn turned out great. This is the only way to prepare fresh corn on the cob.

Sweet Green Bean Bundles

Green beans never tasted so good. Used garlic powder instead of garlic salt but everything else stayed the same. I will be adding this recipe to my quick and impressive side dishes.

World's Best Lasagna

This recipe get 5 stars from me. Not for anyone who is counting calories but excellent for a cheat day! I always follow the recipe as is with the exception of using ground turkey. What a diffenence it makes assembling the lasnaga the day before then baking it. I recently tried the using the hot tap water method of preparing the noodles too and loved it.

Baby Back Ribs

I didn't think a recipe that was so simple could actually be this good, but boy was I wrong. I did follow the input of some other reviewers and removed the membrane from the ribs. They turn out beautifully even grilling them for about 20 minutes. This recipe is a keeper.

Chicken Pot Pie IX

This recipe scores 5 stars from me and my family. I only made a few minor adjustments. I used a bag of frozen veggies and I doubled the sauce mixture and added cooked diced potatoes. Dont forget to brown the bottom pie crust for about 10 minutes before before filling it with the sauce and veggie mixture (i hate soggy crust). These ingredients made enough mix for two deep dish pies...so I froze half of the mix and baked it later that same week....And its just as good using leftover turkey.

Caramelized Bacon

Where has this recipe been hiding all my life? Needless to say we loved it. I prepare the bacon as directed but increasing the cooking time to 15 minutes. To make clean up easier I place the bacon on a cooling rack that has been sprayed with with Pam. Next I put the cooking rack on a foil lined cookie sheet.

Roast Sticky Chicken-Rotisserie Style

What a delicious entree. I got a whole chicken on sale and tried this recipe out. I didn't have white pepper on hand so I substituted seasoned pepper instead. Then after patting the chicken dry I rubbed room temprature butter on the bird (to help make the spices stick) before sprinkling the spices all over it. Next I added a medium chopped onion and 4 large garlic cloves to the cavity before saran wrapping and refrigerating overnight. Finally I cooked the chicken breast side down...there is no way you will get dry chicken using this recipe. The blend of ingredients is perfect for 1 large bird.
