Spinach and Red Chard Quiche

I had recently purchased a 1 lb. bag of cleaned/chopped chard from Trader Joe's and then went searching for a good recipe. So glad I found this one! I made it last night and it's very good! What makes it even better is knowing how nutritious it is. I'm glad I read about the need for 2 pie shells because mine yielded exactly that. I used all the chard and no spinach. I also purchased the healthier pie shells...no trans fat and all natural ingredients. I added a little more parmesan and cheddar and didn't add capers and cardamom. I also added some sliced red peppers and sauteeed them with the onions and added can of drained/rinsed mushrooms. Next time, I will incorporate most of the cheddar into the mixture and sprinkle less on top. This recipe is definitely a keeper and is good served with a salad. Thank you, Melissa!

Company Cauliflower

Very good recipe! My husband and I ate this as a main course for two nights with some fruit or salad as a side dish. I added a little more sour cream and cheese to the recipe. What also worked well for me is the following: In a large bowl, add the sour cream, cheese, some worcestershire sauce, some ground mustard, pepper, and powdered onion. Mix it together and then add the cooked cauliflower...fold gently until it's well coated and place in the greased pan. Then place some sliced tomatoes over the top. Sprinkle buttered breadcrumbs over that and dust lightly with paprika...then bake. It's like a good mac and cheese, but healthier! I really liked the taste and texture!

Cafeteria Macaroni and Cheese

This was a welcome change from the boxed mac and cheese I purchase. It has an interesting, tasty, and comforting flavor. It wasn't as difficult to make from scratch as I had thought. My husband liked it a lot, too. I thought that 8 oz of macaroni appeared too little, so I used a pound instead and (almost) doubled the other ingredients. When I added more cheese to the hot milk before adding to the macaroni, I found that it came out just a little creamier this second time I made it. So, if you prefer not to buy Velveeta cheese, that may work for you. This is a yummy dish!

Angel's Old Fashioned Beef Stew

Yummy and easy comfort food. I followed OLIVERCADO's suggestions under Most Helpful. I added extra carrots, onions, and added some mushrooms because I didn't want potatoes. I thickened it with corn starch and served it over egg noodles.

Baked Scallops

This was so easy and delicious! I will definitely prepare it often! I served it with a rice pilaf and salad. I thawed out some frozen sea scallops (the bigger ones) and it turned out fine. In my opinion, if you cut down just a bit on the bread crumbs and cheese, it won't harm the finished product.

Cream Cheese Pound Cake I

This cake is DELICIOUS! I made it tonight and it got YUM-YUM reviews! For some fun and to satisfy the chocolate lover in me, I mixed in chocolate chips to the batter. I added less sugar as some suggested and more vanilla since I didn't have any almond extract. I may substitute with lower fat ingredients next time and see how that goes.

Zippy Zucchini

I enjoyed this dish! And it's very pleasing to the eye and nose as you take it out of the oven. I kept in mind the previous reviews written here. I cooked it about 10 minutes longer so that it browned nicely and I added a 'kick' to it. Well, I added just a little more cheese, salt, other spices. I ate the leftovers cold for a snack. YUM!

Awesome Broccoli Casserole

I was surprised at how much I enjoyed eating this casserole (with a salad) for dinner. It was so easy to prepare and tasted delicious...very comforting food. A few variations were made: fresh broccoli cut up in small pieces and partially cooked in microwave, low fat sour cream, no corn, after bread cubes are placed on top of broccoli mixture, press them down slightly.
